Oxidative stress is an important factor in the genesis of many diseases, such as cancer, cardiovascular and degenerative diseases. Taking too much synthetic anti-ageing medicine can cause side-effects on body. Therefore, it is important to turn to new natural antioxidant and anti-aging medicine.Recently many researchers have focused on antioxidant from marine organisms because it has the advantages of strong antioxidant, infinite variety, complex structure and low side-effects. According to the recent research, Spirulina platensis and C-phycocyanin can act as a scavenger of reactive oxygen species and they can restrain the accumulation of free radical in vivo. Moreover, they can delay senescence, restrain tumorigenesis and depress hypertension.It is reported that active peptides obtained from Porphyridiaceae can greatly reduce blood pressures. Therefore it is meaningful to develope and utilize Spirulina platensis and CPC in human antisenility program.In this study, the value-added utilization of Spirulina platensis and CPC are investigated. This thesis includes the following sections:In this paper, the crude extract from Spirulina platensis was digested by trypsin, and then the biological function of their hydrolysates was assayed. Results indicated that the antioxidant and ACE inhibitory activities of the hydrolysate were enhanced. The diversification of spectrums was different between the two hydrolytic ways, but antioxidant and ACE inhibitory activities of the hydrolysate were both improved. The crude extract was treated by trypsin, and then its spectrums and efficiency of generating and scavenging hydroxyl radical were detected. The results showed that the structure of CPC changed, but they could still have the function of absorbing and transfering the light energy partly. On the other hand, the ability of scavenging hydroxyl radical increased remarkably. Crude extract was treated by trypsin in HCl and NH4HCO3 buffer respectively, and afterwards the spectrums and its ability of generating and scavenging hydroxyl radical were detected.
