| The purpose of this work was preservation of chilled meat by improving packing of chilled meat. Natural preservative trehalose was added in the Biodegradable multilayer films with high barrier property. We use the methods that include vacuum packaging and the modified atmosphere packaging to extend the shelf life. The high barrier poly(propylene carbonate) (PPC) film with traces of trehalose (TH) was prepared by coating with poly(vinyl alcohol) (PVA) to obtain PPC/PVA/PPC and PPC/PVA/PPC-TH. Its performances were evaluated, the results showed that the tensile strength of PPC from 4.3MPa increased to 29.35 MPa after coating with PVA; Under national standard, the OTR values of PPC/PVA/PPC was 9/1000 times of PPC, the WVTR values of PPC/PVA/PPC was reduced by 4 times.PPC/PVA/PPC, PA/PE and PE film were used to the modified atmosphere packaging of chilled meat (50%O2ã€25%CO2ã€25%N2), the results showed that the shelf life of chilled meat packaged by PPC/PVA/PPC and PA/PE films can achieve 24 days, while it only achieve 14 days packaged by PE. PPC/PVA/PPC film can completely replace the PA/PE film and the preservation effect of chilled meat was better than PE film.PPC/PVA/PPC-TH, PPC/PVA/PPC, PA/PE and PE film were used to the vacuum packaging of chilled meat, the results showed that the shelf life of chilled meat packaged by PPC/PVA/PPC-TH film can achieve 29~32 days, and using PPC/PVA/PPC and PA/PE films can achieve 17~20 days, but using PE film only can achieve 9~12 days. PPC/PVA/PPC-TH film had better preservation effect, and the color of chilled meat was better than other samples. |
