In this paper, industrial degreasing grape seed meal as raw material for the extraction of grape seed meal protein, bleaching, drying and functional properties are discussed to provide a theoretical basis for the utilization of grape seed meal and new product development. The main results are as follows:(1)Determine the extraction of grape seed meal protein.By alkali dissolution method, salt bath method to extraction of grape seed meal protein, on the basis of single factor experiment design and response surface experiment to optimize the extraction process. The results show that the alkali solution method is a better extraction method, the best extraction condition is: raw material particle size 60 mu, liquid ratio 25:1(v/w), p H11.5, temperature of 37 ℃, 60 min, the extraction yield of 53.04%.(2)Determine the optimal process parameters of decolorization of grape seed meal protein. Use activated carbon, macroporous resin, hydrogen peroxide solution to extract decoloring,the results show that hydrogen peroxide bleaching effect is most obvious, and protein without loss. The best decoloring conditions as follows: 4% hydrogen peroxide, temperature at room temperature, decoloring time 60 min. Grape seed meal protein from reddish brown to light yellow.(3)Determine the grape seed meal protein drying process parameters. By spray-drying method of grape seed extract is dried meal. Uniform design experiments based on the single factor experiment, get the best spray drying conditions were: inlet air flow 0.65 m3/min, inlet air temperature 180℃, feed rate 400 m L/h, atomization pressure 200 k Pa, for verification experiment, the targets set for the resulting are flour yield 45.43%, PDI was 73.1%, moisture content 1.03%.(4)Studied protein functional properties of grape seed meal. With soy protein as reference discusses the grape seed meal basic composition and functional properties of protein powder. The results showed that the solubility and emulsification of oil absorption and better, but water imbibition and foaming ability is poor. |
