| In view of the importance of scavenging free radicals, now theresearches for high efficient, low-toxic and inexpensive antioxidants havebeen one of the substantial subjects in many fields such as biology,chemistry and medicine. Quantum-chemical computational method (DFT)on the level of B3LYP/6-311G basis set is employed to investigate theradical-scavenging mechanism of antioxidants by calculate theirantioxidant activities of several antioxidants in the solvent or in gas inthis thesis. This provided a theoretical basis for searching betterantioxidants and screening of antioxidants.1) The antioxidant activities of several compounds in the gingerZingerone, dehydrozingerone and gingeroloxime are investigated.The results approved that the ability of dehydrozingerone on scavengingfree radicals is obvious if one-step H-donation reaction happen. while ifH-transfer reaction take place, the ability of Zingerone on scavenging freeradicals is more obvious. But the activity of gingeroloxime is notobvious.2) The effect of solvent effect on the antioxidant activities of severalphenolic components in olive oilThe results indicate that this several phenolic components have ratherhigh antioxidant activity.
