With the economical development and the growth in the living standard, the people's requirement of rice quality is higher and higher. The quality of rice is becoming determinant of the domestic and international market. While the current rice quality standards are based on the organoleptic investigation method or physicochemical analysis method, but the methods are subjective, bad accuracy and consuming time, which are restrict the authoritative and the rationality of the standards. Besides our country has establish the embryonic form of the agricultural commodities standard which representative of the rice and wheat, but the standard is not complement and the detection technique is backward. Therefore there is a great lot significance and value of application to reinforce research and development of the new testing technology and measurement tools of rice quality.This paper is based on the material characteristic analysis and the measurement of the micro force-deformation, in order to establish the automatic measure system of rice texture parameters to face rice quality evaluation, the author carry on a series of discussion and research.On the basis of the rice texture characteristic parameters measurement start-of-the-art both here and abroad, contrast and summarize the weak point of the organoleptic investigation method and physicochemical analysis method. Through the analysis the organic material micro force-deformation characteristic and testing technology, put forward the principle and method of the rice quality measurement which based on the material characteristic analytical method, and complete the tentative design of the measure system.Based on the overall scheme, the author takes the research and design on the hardware and software system of the automatic measurement system. The hardware system includes automatic force application device, sensors measure device, and measurement control system and box structure design. The software system includes data analysis, process, management subsystem and human-computer interface design, use the Delphi 7 to write the program of the automatic measurement system, finally composed the"Agricultural Commodities Texture Characteristics Automatic Measurement System".Through the analysis of mechanical properties of rice, established the new method of the rice quality testing which based on the test principle strain and stress of the cantilever beams. Developed the rice quality automatic measurement device. Use the system takes a series of tests the rice quality. The test results show that this measure system could detect the rice hardness and viscosity effectively. On this basis, according to the demand of the measurement of the rice quality, put forward a new quantitative characterization of the rice quality, and comparison between this system and the foreign product proved that this system is suitable for the rice quality measure.Test the quality of rice through analysis the difference of mechanical indexes, and established the relevant automatic measurement system. Provide a convenient, accuracy, reliable method to rice quality measurement from two aspects, which has certain of innovation and practical value. With the further study and constant perfection of the testing system, the system will satisfied the increasingly rich demands of rice quality measure.
