This paper describes the current development of fruit and vegetable industry and the trends of development, describes several common methods in the fruit and vegetable processing industry, and contrasts the development status at home and abroad.Combining with the material characteristics of fruits and vegetables, introduces about commonly used methods and equipments in crushing fruit and vegetable processing, base on the particle broken physics, the theory of particle breakage and energy consumption, analysis crushing management and methods of fruit and vegetable fiber material,the basic theory and key equipment of cutting superfine technology was presented in the subject.Using the fluid analysis software FLUENT to analyze the key part that crushing chamber flow field in the cutting superfine crushing and numerical analysis, contrary to three different impeller structures and motor speeds, analyze the velocity field and static pressure field,the distribution of the shear rate field,analyzes the key structural parameters(impeller)and the operating parameters(rotor speed)on the crushing impact of the flow field,better optimized the combination of impeller and motor speed.This paper describes the characteristics of the feed in the crushing equipment,the main purposes and principles of work, key parts and the key parameters in the equipment, especially for the material choice of key components, followed by the typical fruits and vegetables material cutting crushing experiments, the choice material which are sweet corn and blueberries have tremendous market potential, compares two different states about the sweet corn in the raw and cooked in the crushing experiments, and analyzes the stability of sweet corn slurry in which adding an appropriate amount of stabilizer, but also blueberry crushing experiment in the same condition.This paper focuses on the analysis of the principle of cutting superfine equipment, the analysis of key components and key parameters, using the fluid analysis software simulation to analyze two important parameters, but also the crushing experimental study and the stability experimental study of two typical fruits and vegetables,providing the optional technology and equipment.Providing a theoretical and experimental analysis for the future when cutting technology could improve the quality of fruit and vegetable drinks.
