Rice protein is the main source of dietary protein, which can lower the level of cholesterol and inhibit hyper-lipid related deseases.Rice protein is an excellent source of plant protein with unique protein composition,high nutritional value and balance of amino acid.So far,there is still lack of functional studies of rice protein, particularly comparison of full-protein effect of antioxidant and mechanism at home and abroad.This article chooses 18 kinds of rice from different parts of Heilongjiang Province,extracts rice protein,and compare vitro effect of antioxidant of the ability of free radical scavenging,metal chelating ability ,also study body antioxidant effect and mechanism.In order to provide a theoretical basis for deeply study of different varieties of the antioxidant effect of rice protein,reveal the mechanism of antioxidant,prevent cardiovascular disease and development of functional foods,and provide practical basis for broaden the province's fine, deep, fine processing means.Through the research,we get the follow conclutons:(1)Through analyze the basic nutrients of 18 kinds of flour,discover the content of water is about 7.5%,ash is 1.5%,crude fiber is 0.5 %,fat is 2.5%,protein is 8%.Rice flour with low fat content.Through analyze the basic nutrients of 18 kinds of rice protein,discover the concent of water is about 6%,ash is 0.7%,crude fiber is 0.3 %,,fat is 23%,protein is 60%.Extraction of rice protein by alkaline with a high fat content, therefore we need Skimmed before experiment;(2)Data show that different drying methods don't impact mainly basic nutrients.Water,ash,fat and protein no significant differences, therefore, this study selected the method of drying to extract;(3)Through in vitro antioxidant studys find that the rice protein with the ability of free radical scavenging and metal chelating. Among them, the ability to remove ABTS + is about 45%,hydroxyl radical is about 24%,superoxide anion is about 12%,,chelating iron is about 17%,,copper is about 20%;(4)Compare antioxidant ability of different regions of the rice protein,the ability to remove ABTS+ and hydroxyl radical is no significant differences.The ability of scavenging superoxide anion,chelating iron and copper is significant differences;(5)Through the vivo antioxidant studys, find that rice protein has vivo antioxidant effect. Compared with the control group, rice protein significantly increase SOD, GSH-PX activities and significantly reduce the content of MDA.However, rice protein can't improve the activities of CAT;(6)With the concentration of rice protein is increase, SOD activity is increase,GSH-PX activity is not great increase,but the vitality of CAT is not increase. With the concentration of rice protein is increase,the MDA levels is decrease;(7)Based on the above results, rice protein antioxidant mechanism may be through scavenging free radicals,chelating metals,increase SOD and GSH-PX vitality , reduce MDA content to achieve the goal.
