As the development of the aquatic products processing industry and the gradual increasing consumption of aquatic products, there come some potential food safety problems. To effectively control the quality and safety of aquatic products, reduce the recall costs caused by product quality problems, improve the efficiency of corporate quality management and safeguard consumer interests, eliminating the technical barriers of international trade, with the aquatic products as the research object, this paper designed a quality traceability system for frozen breaded shrimp processing. This system followed with breaded shrimp processing characteristics and quality traceability requirements, learned from the advanced experience of domestic and abroad food safety traceability, identified the nodes in the shrimp product processing effectively according to the coding system requirements promulgated by the state and manage all aspects of information on those nodes, finally realized the information’s trace and tracking in shrimp product safety production process. The major research content includes the following three aspects.(1) According to the research result of domestic and abroad traceability system, the paper carried out a requirement analysis for building frozen breaded shrimp processing quality traceability system based on grasping the concept of traceability. Firstly analyzed the method of product quality traceability that determined the trace information, trace unit and trace model and used it in actual business process, finally analyzed the system data flow.(2) With analyzing batch mixing processing in food industry, use quality traceability precision as the start point in frozen breaded shrimp processing, this paper proposed an optimization model allocated among the batch of raw materials and orders batch, and then got optimal solution by solving the model that can improve precision, reduce recall costs by product quality problem and narrows the responsible tracing range of the raw material suppliers. (3) Based on the quality traceability system requirements analysis, according to system features and database design, this paper realized frozen breaded shrimp processing quality traceability system used C#language and Silverlight technology based on B/S. The quality tracking system not only met the external and internal user product quality information traceability, but also achieved the digital information management on product processing.This system has been carried out in the company and received good results. It proved the feasibility and significance of the establishment of a traceability system through running in the company, in addition, the optimization model for batch mixing problem that can provide guidance to resolve this issue for other food processing.
