This article inquiries into the development and historical influence of Soochowcuisine cooking technology during Ming and Qing Dynasties. The development ofSoochow cuisine cooking technology will divide into the foodstuffs roughing andpreservation technology, the dishes cooked technology, the flavor leveling technology tostudy. Simultaneously analyzes the historical influence which the development of Soochowcuisine cooking technology brings. This article mainly utilizes the theory of gastrology, toconstruct the explanation frame of the process of the development of Soochow cuisinecooking technology during Ming and Qing Dynasties, to clarify the historical context ofthe evolution of Soochow cuisine cooking technology. Finally through summarizes thehistorical influence of Soochow cuisine cooking technology during Ming and QingDynasties, to improve the awareness of protection and development of Soochow cuisinecooking technology, and provides a useful reference for the development of Soochowcuisine.
