In this thesis,dominant lactic acid bacteria were isolated and screened from naturalfermented Lophius litulon liver and applied in inoculated fermentation of Lophius litulonliver.The main conclusions were as follows:(1)15srtains of lactic acid bacteria were isolated and purified from natural fermentedLophius litulon liver.2strains of Lactobacillus L1and L8were screened out through the test,L1was preliminarily indentified as pediococcus and L8was preliminarily indentified asLactobacillus. Fermentation performance tests showed that the optimum growth temperature ofL1was around30℃and the optimum growth temperature of L8was around35℃.Tests ofgrowth curve and acid curve showed that L1entered the stable growth period after cultured for20hours and L8entered the stable growth period after cultured for22hours.(2)The basic components of Lophius litulon liver were determined as: moisture48.37±0.53%, protein12.69±0.43%, fat35.76±0.56%, ash0.95±0.03%.(3)Studies have shown that optimal process parameters of ozone reducing bacteriatreatment of Lophius litulon liver were:ozone concentration3mg/L, ozone reactiontemperature3℃, solid-liquid ratio1:5, reaction time8min.(4)Single factor experiments and response surface regression analysis showed that: thequadratic model equations of vaccination quantity (X1), fermentation temperature (X2) andfermentation time (X3) affected the amino nitrogen content (Y1) and nitrite (Y2) trend were:Y1=61.089-0.486095X1-1.481128X2+2.74912X3-2.788139X12+0.63875X1X2+0.29375X1X3-0.882483X22+0.63625X2X3-2.199473X32Y2=0.569975+0.02889X1+0.103976X2-0.18988X3+0.177014X12-0.0175X1X2-0.035X1X3+0.05327X22-0.0425X2X3+0.129284X32Optimization of fermentation conditions were: vaccination quantity1.78%, fermentationtemperature34.5℃, fermentation time27.2h.
