Fairy shrimp is a fat-rich live prey, that’s lipid composition are mainly unsaturated fattyacid. But now, The studies about the function of fairy shrimp oil are relatively rare. In thisresearch, the fairy shrimp was made as raw material, the brine shrimp oil was extracted by themethod of ultrasonic-assisted extraction, its fatty acid composition was determinated. Andthen the oxidation stability of fairy shrimp oil was tested. On these basis, the hypolipidemicand antioxidant activities was studied. These results can provides a theoretical basis for thefurther development of fairy shrimp oil.The best solvent of the extraction of fairy shrimp oil is ethyl acetate, the fairy shrimp oilyield is84.83%on the optimal extracting conditions, which are ultrasonic power150W,liquid/solid ratio10:1, ultrasonic time40min and ultrasonic temperature60℃. Compared withsolvent extraction, the extraction time was shorted, the quality can be improved. The oil’sfatty acid composition was determinated by GC-MS,18kinds of fatty acids was found. Thecontent of linoleic acid is highest in30.96%, oleic acid is21.63%, linolenic acid is11.14%,EPA is4.55%. Unsaturated fatty acids are content of81.05%, the amount of monounsaturatedfatty acids were reached31.02%,and the polyunsaturated fatty acids were reached50.03%,the essential fatty acids linoleic acid and linolenic acid can reached42.1%.The acid value, peroxide value and carbonyl value were made as measurement indicators,the results showed that fairy shrimp oil would come into intensely reacting of oxidativerancidity with temperature and illumination. And the higher the temperature the faster theoxidative rancidity. The Propyl Gallate (PG), Vitamin E (VE), Butylated Hydroxy Toluene(BHT) and Tea-polyphenols were added into fairy shrimp oil, the rancidity was effectivelyinhibited, and PG is the best, followed by the VE、BHT and Tea-polyphenols.The increase of the body’s weight in mice can be slowed by fairy shrimp oil, the mouse’sliver index can be reduced. And the higher the dose gavage, the lower the mous’s liver index.Fairy shrimp oil could reduce serum TC, TG, LDL-C level significantly, and increasedHDL-C concentration, AI was also reduced. The oil could regulate lipid. Fairy shrimp oilcould reduce MDA content of liver and brain effectively, CAT,SOD and GSH-Px activity inliver and brain were improved, and T-AOC of liver and brain was also enhanced. Theseresults showed that the body’s antioxidant bility could enhanced by fairy shrimp oil.
