The results showed that:1,The total flavonoid content of navel orange juice pomace powder by drying at50℃:4.26mg/g, the polyphenol content:11.25mg/g, scavenging DPPH·, the ABTS·+,·OH effect were:94.32%,27.38%,12.01%;2, Navel orange juice and fresh fruit residue by50℃,90℃,130℃,170℃,210℃conditions of heat treatment, total flavonoids, total phenolics, clear the·OH radical effect of thermal stability is relatively strong in the below90℃temperatures, good thermal stability, thermal stability decreased more than130℃condition. Clear DPPH·, the ABTS·and restore the power of thermal stability is relatively poor thermal stability decreased with increasing temperature.3,Level under the conditions set in this study, the optimal conditions for the pectin acid extraction:A2B3C2D3, ie, solid to liquid to1:30, pH1.5, temperature85℃, time70min, the conditions of pectinthe extraction rate of20.93%.In short, the navel orange juice Marc antioxidant activity, pectin content can be used as antioxidant, pectin resource use. It should be noted heat oxidation resistance.
