Based on the analysis of the technology of Raman spectroscopy, the internal structure of molecules can be gotton. It can be concluded that there is a group by observing the position of Raman peak. Generally, the internal structure of matter is obtained through the analysis of the frequency shift, peak intensity, spectrum of the Raman. As SERS has high sensitivity, the information of molecule is detected by the surface adsorption phenomena.Lycopene is a kind of natural pigment contained in plants. Through lots of scientific research, it is proofed that lycopene plays an important role on human health. In this paper, through the experimental analysis of Raman spectra with lycopene dissolved in different organic solvents, the characteristic of spectral line, the analysis of the shift change of measured Raman frequency reflected by spectrum chart, Raman peak width, intensity of Raman peak are analyzed. Studied on the change of Raman peak of Lycopene molecules dissolved in different organic solvents, and made curve fitting, the effects on the Raman scattering of the molecular interactions is drawn.
