In recent years, with the continuous exposure of food and drug safety events, food and drug safety problem has become the primary issue which consumers pay close attention to and the fast and accurate analysis detection method has become the focus of the research. As a new approach for the analysis of detection, nonlinear chemical fingerprint technology has advantages of convenient operation, simple sample preparation and obvious characteristic. What is more, it also has important significance and broad prospects in the study of quality control and adulteration identification.In the first chapter of the paper, the current status of food safety of our country and nonlinear chemical reaction process were reviewed and the various risks and hazards in food safety of our country were analyzed. Also, several common reaction mechanism of nonlinear chemical reaction and the background, development process, application prospects of nonlinear chemical fingerprint were analyzed and discussed.The second chapter mainly researched the nonlinear reaction mechanism and had a further understanding of basic information, characteristic, reproducibility and specific experimental process of the nonlinear chemical reaction. The results showed that, nonlinear chemical fingerprint reflected the intrinsic characteristics of the sample, and not only had the remarkable characteristic and good reproducibility, but also included a large number of intuitive and quantifiable information which provided favorable conditions for the qualitative identification and quantitative evaluation of samples.The influence of reaction temperature, stirring speed and dosage of detection on the determination of nonlinear chemical fingerprint was discussed in the third chapter in detail, and by experiment the function relationship between the testing conditions and the quantitative information of nonlinear chemical fingerprint were obtained, and also the detection conditions were optimized to choose the best testing condition. The results showed that in the appropriate dosage of detection range, quantitative information (such as oscillation life, induction time, oscillation period, maximum amplitude, etc.)between the effective composition content of the sample had good function relationship which had great significance on the quality evaluation of samples and quantitative analysis of the composition.Several common fingerprint similarity calculation methods were introduced in the fourth and fifth chapters. By comparing the similarity calculation results of nonlinear chemical fingerprint, the result was that, compared with Euclidean distance, correlation coefficients and Angle cosine, system similarity was more suitable for the similarity evaluation of nonlinear chemical fingerprint. In addition, combined with visual information, quantitative information, and the similarity evaluation method, the adulteration of food, Pharmaceuticals and agricultural products were researched and evaluated which promoted the applications of nonlinear chemical reaction.
