Phthalates are a class of chemicals that can play the role of softening and plasticizing. Teratogenicity, carcinogenicity, reproductive and developmental toxicity and mutagenicity of phthalate esters and their metabolic products caused serious harm to people’s health. So, depending on the characteristics of the food matrix, the establishment of purification pretreatment method suitable for the extraction of various types of food and accurate qualitative and quantitative measurement method is particularly important. This thesis is based on the characteristics of the different food matrices, respectively, sample pretreatment methods of extraction purification. Ultrasonic extraction, liquid-liquid extraction, matrix solid phase dispersion extraction purification method, combined with the application of UV chromatography detection tool to achieve accurate qualitative quantitative counterposes.This thesis selected life prevalent ten phthalate esters, dimethyl phthalate(DMP), di-hexyl phthalate(DHP), diethyl phthalate(DEP), diamyl phthalate(DAP), phthalate, di-propyl(DPP), n-butyl phthalate(DBP), phthalate, butyl benzyl phthalate(BBP),phthalate, cyclohexane phthalate(DCHP), dibutyl phthalate, n-octyl ester(DOP), dibutyl phthalate ethyl hexyl phthalate(DEHP) as the research object, using a UV spectrophotometer, high performance liquid chromatography, analytic instruments such as gas chromatography, after a large number of experiments and data analysis, research and the establishment of food in dozens of simultaneous determination of phthalate esters residue analysis method, which concluded as follows:1, in the determination of the content of pure drinking water phthalate, di hexyl phthalate (DEHP), the application of n-hexane solvent extraction phthalate, di hexyl ester drinking purified water, nitrogen, and with a constant volume of methanol, create Microspectrophotometer determination of its content, and the detection conditions were optimized. The standard curve equation y=1.5347x+0.0266, correlation coefficient of0.9970,0.64%continuous measurement precision, reproducibility (RSD) was0.57%, and the recovery of88.89-97.73%. The method can be used bottled drinking pure water phthalate Di hexyl determination, simple, rapid, with satisfactory results.2.10phthalate potato chips in the method for determination of the establishment, the use of matrix solid phase dispersion extraction of potato chips10phthalate, diatomaceous earth as a matrix, using ethyl acetate as extractant, and extraction conditions optimized the last nitrogen and methanol constant volume, high performance liquid chromatography to determine the content of the chromatographic conditions were optimized. Determination of10phthalate content in the edible oil, phthalates ultrasonic assisted extraction method in the extraction of edible oil, the establishment of a gas chromatography to determine the content it, and the use of response surface methodology to optimize the ultrasonic assisted extraction pre-treatment conditions. Phthalates standard curve equation linear correlation coefficient of0.9946-0.9999, and the relative standard deviation (RSD) between0.19%-2.34%, the10phthalate blank samples were added to50mg/L phthalates and100mg/L mixed standard solution, the spike recovery results showed that the recoveries were76.44%-84.28%.
