This paper studied the preparation, the antibacterial activity, the antioxidant activity and solubility of chitosan iodide.Firstly, this paper studied the preparation of chitosan iodide and impact factor. In the acidic conditions, it got different iodine content of chitosan iodide with chitosan and KI as raw materials by controling reactive conditions. The impact factor on preparation such as reactive temperature and time, the concentration of KI and acetic acid.The optimum conditions were as follows:reactive temperature was room temperature, acetic acid concentration was1%, KI concentration was lmol/L, reaction time was lh, the iodine content of chitosan iodide was35%, and then3times volume absolute ethyl alcohol used to precipitate Chitosan iodide,4000r/min centrifuge for20min and parch the deposit at50℃4-5h.Secondly, the antibacterial activity of chitosan iodide was the main part in this paper. This paper studied the antibacterial activity of chitosan iodide to some kinds of bacteria in vitro and the relationship between antibacterial activity and pH, concentration of chitosan iodide, and concentration of acetic acid. The results showed that chitosan iodide had antibacterial activity to S. aureus, E. coli, C. albicans and A. niger. The MIC were0.01%,0.05%,0.5%,0.05%.The best inhibition concentration were0.10%,0.50%,1.00%,0.50%.When pH5.5, chitosan iodide had better inhibition to4bacteria. With the concentration of acetic acid increased, the inhibition of chitosan iodide were enhanced. Chitosan iodide had better inhibition than chitosan at the same concentration and pH.Lastly, this paper analysed the structure of chitosan iodide by UV spectrum and IR spectrum and studied several properties of chitosan iodide, specifically focusing on the solubility, the antioxidant activity, moisture adsorption and moisture retention. The results showed that chitosan iodide belonged to amine salt and iodine exists in the form of ion. It had certain inoxidability, however, it was much lower than Vc. Chitosan iodide had better moisture adsorption and moisture retention. Therefore, it can be regarded as coating to preserve fruit and vegetable.The results showed that chitosan iodide has better solubility, antibacterial activity, moisture adsorption and moisture retention.
