The right amount of biogenic amines in the physiological activity of the body play an important regulatory role in, for example, regulation of body temperature, pH and volume control stomach, regulate human emotions, and polyamines in vivo protein, RNA and DNA synthesis plays an important role. But when the body after excessive intake of biogenic amines, will produce a series of emergency response, causing headaches, respiratory disorders, palpitations, changes in blood pressure and other adverse symptoms, the latest research shows that the biogenic amines in vivo cancer patients than in healthy people. Current research on biogenic amines in foods has become a hot issue, its research and testing can enhance and improve food quality and safety.Currently detection of biogenic amines is mainly gas chromatography method capillary chromatography, liquid chromatography mass spectrometry and reversed-phase high-performance liquid chromatography. When using RP-HPLC method for the detection of biogenic amines, because neither of biogenic amines in itself is no specific fluorescence characteristics of UV absorbing group, generally require pre-column or post-column derivatization, the process is relatively cumbersome.
