ObjectiveTo investigate nurse puerperium lifestyle, dietary structure and milk fatty acid (FA) and trans fattyacid (TFA) isomer content in Fuzhou area, and to study the the relationship between them, in order toguide rational diet and health way of life.Methods“The nurse lifestyle, nutrition and health survey " was conducted in the nurse who meet theconditions and live for a long time in Fuzhou area. The gas chromatography mass spectrometry(GC-MS) analysis method of TFA in breast milk was established, and FA and TFA of sample was test.The results were coding, assignment and EpiData data double entry, dietary statistical analysis wasevaluated by Excel software, nutrition calculation software and SPSS13.0software. The statisticalmethods of nonparametric test (α=0.05) and Nemenyi multiple comparison (α=0.10) were used toanalyse the relationship between FA and the dietary structure and nutrition intake.Results1. Poultry meat and eggs average daily intake of puerperium nurse were439.5%and350.0%ofNurse dietary pagoda reference intake. Fruits and vegetables were only43.3%and25.0%, milk andmilk products and beans and bean products were0%. The average daily energy intake was only78.5%of nurse RNIs, carbohydrate energy ratio is too low (34.3%), protein (27.9%) and fat (37.0%) of thepower is too high. Calcium and VitC average daily intake of ratio of45.4%and73.8%of nurse RNI orAI, without milk and soy source of calcium.2. SFA content of breast milk fatty acid was57.43%, MUFA27.75%, n-6PUFA14.43%, n-3PUFA0.74%, n-6PUFA/n-3PUFA ratio19.28, LA/ALA ratio26.24. EPA of the plain and coastalwas higher than the mountain (P1=0.08, P2=0.07); LA/ALA ratio of graduate and above was higherthan high school and the following (P=0.06); DHA of Professional and civil servants was higher thanunemployment at home (P=0.06); And SFA content of the pure breastfeeding was lower (P=0.046),MUFA higher (P=0.043). 3. The gas chromatography mass spectrometry (GC-MS) analysis method of TFA in breast milk,which instrument and pretreatment conditions were optimized, can be used for12kinds of TFA and itsisomeric detection, method detection limit was4.0-47.1mg/kg, recovery rate80%-113%, RSD2.9%-14.5%in breast milk fat. TFA were detected in partial samples and the contents were between9.5mg/kg and46.9mg/kg.Conclusion1. Meat and eggs intake of puerperium nurse were adequate even excess, but vegetables, milkand dairy products and beans and bean products consumption were extremely low, and the fruits wereless. Total energy intake was insufficient, the three major nutrients energy was not reasonable yet.Calcium and VitC intakes were low, no calcium from milk and legumes source. It was suggested toincrease grain and potato, especially milk and dairy products, beans and bean products, fruit andvegetable intake, pay attention to the balance of foods, increasing calcium with high content of VitCfood intake.2. LA/ALA ratio was higher in breastmilk FA. The intake of linseed oil, Sue seed oil, soybeanoil and deep sea fish, shellfish aquatic animals and seaweed and other food rich in n-3series FAshould be added. Meanwhile breast FA content, especially the UFA content, were influenced by thegeographical environment, social factors and feeding way, which deserves further study.3. Compared with gas chromatography FID method, breast milk TFA GC-MS detection methodwas more accurate in qualitative and quantitative analysis. In the actual breast milk detection, TFAswere found in some breastmilk sample, but contents were lower.
