The ginger resources is rich in China, the relationship between supply and demandin the market is stable, the Ginger products are loved by the majority of consumers, theginger products in factory which are peeled allows a large number of abandoned gingerskin become a burden on the environment,.The ginger skin is rich of gingerol,take fulluse of a reasonable method to extract these active ingredients so that to maximize theireffectiveness and turning waste into treasure, at the same time it can bring great social,economic,and social beneifts. This paper selected the best solvent used for extractinggingerol with the FC method and optimized the processing conditions.Study antioxidantactivity and antibacterial properties of gingerol by the method Lipid oxidationexperiments, free radical scavenging assay and the conductivity method.The speciifcifndings are as follows:(1) The experiments measuring gingerol content with FC method:the Na2CO3concentration,8%,the forint phenol concentration,0.65mol/L,temperatureC,32.5。,time,2.25h. After screening by four organic solvent, ethanol extracted the best. Thegingerol final yield was4.31%.(2)The antioxidant effect is signiifcant when it is used in Salad oil and sunfloweroil which are rich of Polyunsaturated fatty acids and less signiifcant when used inMonounsaturated fatty acids such as Peanut oil and coriander oil.Since lard is consist ofSaturated fatty acids,it can do nothing about the antioxidant.(3)Radical scavenging experiment, gingerol can remove DPPH and ABTS ridicalscavenging effectively, the effect of the gingeol extracted from the ginger skin isobviously better than of the peeled ginger and TBHQ,but had nothing different from theothers on the Hydroxyl radicals and superoxide anion.(4)The antibacterial experiments: Gingerol extracted from ginger skin had a greatdamageing effects on yeasts and Staphylococcus aureus cell membrane,a weakdamaging effects on the cell membrane of Aspergillus niger. Damaging effects on thecell membrane of Bacillus cereus and E.coli was slightly stronger than the peeled gingergingerol. Inhibition against Staphylococcus aureus, Bacillus cereus and Saccharomycescerevisiae are stronger than gingerol of peeled ginger,the inhibition on E.coli is weakerthan of peeled ginger gingerol. Overally, the inhibition on bacteria of gingerol extractedfrom peeled ginger and ginger skin are weaker than of the supercritical extraction and polylysineo...
