Iodine deficiency can cause a series harm of metabolism and growth to the human body. Iodine deficiency is one of the public health problems in many countries of the world including China. Iodine supplement with inorganic iodine in salt commonly used in recent years has exposed more and more disadvantages, so that seeking a safe and healthy way to effective iodine supplement become one of the focus of life science.Kelp (Laminaria japonica Aresch) is known as the "longevity food","iodine champion" in the world, and is one kind of the large brown algae seaweeds. Kelp is a nutritious edible brown algae, contains polysaccharides, proteins, vitamins, minerals and other nutrients, and is particularly rich in iodine content divided into inorganic iodine and organic iodine. But many research results have confirmed that there are much loss of the kelp iodine easily in the process of storage and processing, thus the effect of iodine supply is greatly reduced. To prepare a stable iodine complex with kelp ingredients as raw materials, the study carried out carried out four aspects of the experiment, the results are as follows:(1) Iodine content in different chemical states in kelp:The average total iodine content of kelp test samples can be achieved0.12%(kelp fresh weight), and91.9%from it was water-soluble iodine. â… -presence which was the main exist form of water-soluble iodine occupied87.1%of total iodine, and I O3-occupied4.4%; Organic iodine occupied only8.5%of total iodine, its main exist form was insoluted organic iodine which percentage of total iodine was8.1%, and water-soluble organic iodine occupied only0.4%. The results show that, although it contains very rich iodine in kelp, its vast majority is water-soluble iodine which is easy to drain.(2) The preparation of seaweed gum-iodine complex:The series of samples of alginate-iodine complex and acetylated alginate-iodine complex are prepared respectively, which has maximum absorption peak in590nm commonly; The experimental results shows that alginate itself has certain iodine adsorption capacity, the alginate after acetylation enhanced its ability to combine with iodine, the iodine content of acetylated-alginate-iodine compound series samples was obviously higher than that of alginate-iodine compound series samples, and the degree of acetylation influences the ability of alginate combined with iodine.(3) The study of stability of alginate-iodine compounds:Stability analysis under different conditions of alginate-iodine compounds and acetylated alginate-iodine complex series of sample was carried out, and using the product to preparing iodized salt and discussing their stability. By the experiment result, the stability of acetylated alginate-iodine compound is higher than not acetylated alginate-iodine compounds, and the iodized salt prepared with the two iodine compound is better than common inorganic iodized salt stability is good.(4) Research of the iodine supplement effect of iodized salt prepared with alginate-iodine complex:To research the iodine supplement effect of iodized salt prepared with acetylated alginate-I2through the establishment of iodine deficiency mouse model. The results show that iodine supplement effect of iodized salt prepared with acetylated alginate-I2is better than salt prepared with KI and KIO3.In summary, it is necessary to further research and development for acetylated alginate-I2as a good agent of iodine supplement, in order to obtain a more stable and secure iodine products. |
