| "Mad cow disease", "dioxin" and other food safety problems cause people panic around the world, make us more and more attention to beef quality and safety problems. Facing the grim beef quality and safety problems, Britain, the United States and other developed countries have introduced the corresponding laws, regulations and effective policies. For China, the problem of beef safety, on the one hand, the production enterprises should improve food safety awareness, on the other hand, the regulatory authorities should strictly control and monitor the production process, Traceability system is the most effective economic and convenient way to solve the food safety issues. The building of beef quality and safety traceable system, helps to safeguard the legitimate rights and interests of consumers, helps to strengthen the supervision and management of supervisor, helps to meet export trade of the beef product. Currently, the country is also actively engaged in researching quality and safety of beef traceable system and initial success, however, owning to the very complex beef production process, so it needs to carry out further research. In this paper, on the basic of the various aspects characteristics of beef production process, traceability system in beef quality and safety was designed and implemented. Concrete research content is as follows:(1) the selection of key source tracing index: At present, there are many domestic and foreign laws of food safety problems, but it is not feasible to record all of the information involved from an economic viewpoint, and it would also have a certain influence on the response speed of the system, therefore, Beef production process is more complex, including breeding, slaughtering, processing, transportation, sale and other stages, each link has a corresponding technical indicators,so it is essential to filtrating traceability index of beef production process. this paper analyzes the current beef cattle breading mode, and determines the quality and safe traceability system of "centralized beef cattle breeding mode". on the basic of analyzing business process of breeding, slaughter, marching, conveyance and marking, effectively filtrated key traceable indicators in all sectors of beef production.(2) The choice of individual identification technology: Individual identity is an important technique for implementation of beef quality and safety traceable system, through individual identification of each link about beef production process, achieved tracking and tracing of system. Existing individual identification includes RFID techniques, bar code technology, DNA identification technology, magnetic, infrared spectroscopy, iris technology etc. Through the contrast analysis, system used RFID technology and two-dimensional code techniques, because RFID tags have the characteristics of resisting pollution, wear resistance and being able to work in harsh environments etc, system used RFID tags to identify beef cattle in stages of breeding and slaughtering processing, at the same time, the two-dimensional code has a strong ability to read word, so system used two-dimensional code to identify beef product in beef transportation and marketing process.(3)Selection and design for coding scheme: To achieve unique identification of beef products for traceable system, it must establish a good scheme of coding. Unique identification of the product can be used to identify different traceable products and make each traceable product has its own unique credentials. currently, there are a good deal of coding schemes, such as the EPC code, EAN-128, through comprehensive analysis, the system used EPC encoding scheme to uniquely identifies for final beef products of this system, referring to the Ministry of Agriculture†Livestock and poultry identification and breeding records management approach†for designing traceable code for breeding beef cattle, and slaughtering stage body back to the source code using "slaughtering information and ear label" are identified.(4)Design and implementation of traceability system in beef quality and safety: Through the demand analysis and functional analysis for beef quality and safety traceable system, proposed the overall design for traceability system in beef quality and safety, designed traceable platform on beef quality and safety and management subsystem of each link. Finally, system implemented each module of traceability system in beef quality and safety. |
