| Ginger is a traditional vegetable both as drug and food resource. Because ginger is a cultivation crop for one year, for the purpose to improve its economic benefit, it usually needs to be stored before coming to the market. The traditional way of ginger storage is cellars,but it will result in nutrition loss and tend to produce PHyria scabiei Hopkins damage. In recent years, many scientists begin to research controlled atmosp Here storage. However, the controlled atmosp Here storage is generally carried out by low O2 and high CO2, which have some positive effects on preservation but are likely to cause off-odors and CO2 injury. It has no literatures available that whether can alleviate the high CO2 injury and control the PHyria scabiei Hopkins at the same time by increasing the O2 concentration. Therefore, our research sets the natural air as CK, and sets the O2 /CO2 proportions as follows: 100%O2, 90%O2+10%CO2, 80%O2+20%CO2, and 70%O2+30%CO2 for ginger storage, and 100%O2, 95%O2+5%CO2, 90%O2+10%CO2, and 85%O2+15%CO2 for PHyria scabiei Hopkins control. Results are as following:1.The suitable O2/CO2 treatment, especially 100%O2 and 90%O2 + 10%CO2 treatments could significantly improve the process of the reactive oxygen metabolism, clean the reactive oxygen of ginger quickly and maintain the SOD(superoxide dismutase) and POD(peroxidase) activity at higher level. For example, at the 28 d,the activity of the SOD and POD of this two treatment are respectively 42.69%ã€41.87% and 43.14%ã€44.09% higher than CK’s. Too high O2 concentration causes the increase of O2-? and H2O2, but it maintains the high SOD and POD activity, which leads to the decrease of MDA content. For example, at the 28 d, the O2-? and H2O2 content of the two treatments are respectively 25.67%ã€25.69% and 48.62%ã€48.31% higher than CK’s, but the MDA content is 53.97% and 52.75% lower than CK’s.2. The suitable O2/CO2 treatment, especially the 100%O2 treatment can significantly increase the storage quality of ginger. For example, the respiratory peak of it appears at 35 d, and is 7d later than that of CK, making it the weakest group of respiration. For example, at the 28 d, the respiration of it is 39.27% lower than that of CK. It maintains the nutrition and moisture better. The dry weight and fresh weight loss of 28 d of it is respectively 38.16% and 35.54% lower than that of CK. It maintains lower cellulose content and higher ginger oil and soluble sugar content. For example, at the 28 d, the cellulose content of it is 23.93% lower than that of CK, but the ginger oil and soluble sugar content are respectively 16.67% and 68.56% higher than that of CK. The treatment can also maintain the color of ginger better. The effect of the 90%O2 + 10%CO2 treatment is a little worse, but there was no significant difference between the treatment and 100%O2 treatment.3. The enzymes of all treatments has a significant decrease during the processing compared with CK. Among them, 95% O2 + 5%CO2% treatment has the most significant declining. At 36 h,the activity of the protease, PPO, Car E, ACh E and GST are respectively 64.95%, 15.47%, 57.51%, 59.13% and 40.79% lower than that of CK, which causes the mortality rate of the p Hyria scabiei Hopkins of the treatment 97.36 higher than that of CK.4. To sum up the result of the preservation experiment and p Hyria scabiei Hopkins experiment: 90%O2 + 10%CO2 is the best treatment to preserve ginger and control the p Hyria scabiei Hopkins at the same time. |
