In view of the disorders in the liquor industry, there is imminent to detect the true and false of liquor rapidly and accurately.Nowadays, finger-print is widely used in major areas of food security because of the prominent advantages.Thus,based on finger-print combined with Pattern Recognition methods,the qualitative analysis of the liquor category attributes are carried out. The classification of different brands of liquor with the same flavor and alcohol and the identification of the liquor age were studied intensively.The work provides a powerful reference to resolve the problem of wine industry,which is lack of authenticity control strategy to achieve rapid analysis.Finally the vintage model is used to predict and exclude the sample,which does not belong to the known classes.The study can also be used to identify the "shoddy" technology.The main contents are as follows:(1) To identify and quantify the components contributing to the aroma of liquors by GC–MS and IR,in order to provide data support for fingerprint model.(2) To make a comparison among the fingerprint and establish the liquors identification model with flash fingerprint analysis system combined with PCA.(3) To elaborate the relationship between aroma compounds and liquors by fingerprint model. A better comprehension of this knowledge will be significantly helpful for the improvement of characteristic aroma and to identify the genuine and fake liquors.The fingerprint of liquor was established by gas chromatography-mass spectrometry and infra-red spectroscopy, and the classification of fingerprints was evaluated by the Pattern Recognition program. The precision and repeatability of the method were good.The fingerprints of these liquors were compared in characteristic components and similarity. The results demonstrated that different batches of liquors had good convergences and divergences. Therefore, in this way, combining characteristic components and fingerprint similarity results,liquors can be distinguished from other.The established method offers technical basis for the identification of liquors.
