In recent years, the reaserch studies on antioxidant activity of protein hydrolysate in great numbers, the protein may contain peptide sequence of the antioxidant activity.goose is a kind of low fat, low cholesterol, high-protein nutrition food, and our country’s goose accounted for 91% of total world goose. So we have abundant goose resourses.this study adopts protease to enzymolysis goose.It is found that goose hydrolysate has antioxidant property. It is significant to improve the agricultural comprehensive benefit, promote to extend the goose meat processing industrial chain and to promote the development of functional food.Our topic puts the goose meat as raw material and uses enzymatic to extract goose antioxidant peptide.1. The experiment identified that the alkaline protease was the best enzyme digestion of goose meat protein. the optimal preparation processing conditions of polypeptide from goose meat protein by single facter and response surface method were hydrolysis time 7.2h, enzyme addition amount 1200U/g, hydrolysis temperature 53℃, pH 10.5 and the solid-to-liquid ratio 1:3 (g:mL). Under the optimal hydrolysis conditions, the degree of hydrolysis and the reducing power were 34.74%and 0.402, respectively.2. This study determines the optimal separation condition of antioxidant peptide production from goose meat polypeptide by SephadexG-25:2 mL sample of volume,100 mg/mL of the sample oncentration,0.6 mL/min of the elution rate. Goose peptide under the optimum separation conditions were separated four components by SephadexG-25,the third component had the best value of the reducing power and DPPH. The third component of relative molecular mass is about 695.3.The sixth and fifth component were isolated from the third component.the sixth component had the best antioxidant effect by the reducing power and DPPH expirements.3. We found that goose antioxidant peptide can help reduce inflammation and restrain the rise of il-6 and TNF-a levels. Compared with model group, high and low dose peptide peptides decreased plasma endotoxin by 4.82% and 6.08% and IL-6 by 7.81% and 11.52%,TNF-a by 3.99% and 5.3%, goose antioxidant peptides has a significant effect to reduce PLA2 level and improve intestinal SIgA level.low dose and high reduced PLA2 17.04% and 29.5%. Promoted SIgA 19.3% and 34.6%4.High active component got 15 kinds of amino acids by amino acid composition analyzer, Which Tyr (33.59%), Phe (18.25%), ihs (7.16%), Gly (42.74%)accounted for the vast majority.Goose antioxidant peptide’s molecular weight is 238.14 Da by MALDI SYNAPT QTOF MS and got the amino acid sequence of Gly-Tyr by the mass spectrum sequence analysis...
