Highly purrified triacylglycerols including same fatty acid type(La La La/MMM/PPP/StStSt) and mixed fatty acid type(SLaLa/SMM) were obtained by esterifing glycerin, monoacylglycerol with fatty acid. Triacylglycerols product were mixed to form binary mixtures and ternary mixtures, then compatibility of binary and ternary mixture system were studied.Molecular distillation technology and oil refining process(including alkali refining, bleaching, deodorization) were used to purify synthesized triacylglycerols product. Purity of triacylglycerols product were as follow: La LaLa, 94.8%; MMM, 97.7%; PPP, 96.5%; StStSt,95.5%; SLa La, 81.3%; SMM, 81.9%. Esterification reaction conditions were as follows: reaction temperature, 200℃; reaction time, 8 hours; molar ratio of glycerol to fatty acid, 1:3.3; molar ratio of monoacylglycerol to fatty acid, 1:2.5; catalyst, activated carbon.The same fatty acid triacylglycerols(La La La. MMM, PPP and StStSt) were mixed to form binary mixtures and ternary mixtures. Solid fat content(SFC), isothermal lines(SFC-T) and deviation curves(△SFC-T) were determined to analyze compatibility of the mixture system. Conlusion were as follows:(1) Both La LaLa+MMM system and La La La+PPP system show eutectic phenomenon; the binary system of La La La+StStSt show eutectic phenomenon and monotectic phenomenon; At 35℃ and 40℃, the shorter the fatty acid chain, the more obvious eutectic phenomenon(MMM<PPP<StStSt).(2) MMM+PPP system show eutectic phenomenon at 40℃; Compatibility of MMM+StStSt was good; The shorter the fatty acid chain, the more obvious eutectic phenomenon(PPP<S tStSt).(3) In ternary systems of LaLaLa+MMM+PPP and La La La+MMM+StStSt, obvious eutectic phenomenon were observed; At the temperatures of 30℃, 35℃, 40℃, the shorter the fatty acid chain, the more obvious eutectic phenomenon(PPP<StStSt)The same fatty acid triacylglycerols(LaLa La. MMM) were mixed with mixed fatty acid triacylglycerols(SLa La,SMM)to form binary mixtures and ternary mixtures. Solid fat content(SFC), isothermal lines(SFC-T) and deviation curves(△SFC-T) were determined to analyze compatibility of the mixture system. Conclusions were as follows:(1) Binary system of La La La+SlaLa show eutectic phenomenon, The higher content of SLa La, the weaker the eutectic effect. Both eutectic phenomenon and monotectic phenomenon were observed in binary system of LaLaLa+SMM and a good compatibility point was found when content of SMM was 50%.(2) Binary system of MMM+Sla La show both eutectic phenomenon and monotectic phenome non, at 35℃, a slightly monotectic phenomenon was observed in the mixture system of Sla La which have a short fatty acyl chain, and MMM+SMM system show eutectic phenomenon; Good compatibility was found when the content of SMM was less than 50% and there was a faint eutectic phenomenon found when SMM content was more than 50%; At 40℃, both MMM+Sla La and MMM+SMM system show eutectic phenomenon and The shorter the fatty acid chain, the more obvious eutectic phenomenon(SLa La<SMM).(3) the ternary system of La La La+MMM+SLa La and La La La+MMM+ SMM, show obvious eutectic phenomenon; At 30℃, the shorter the fatty acid chain, the more obvious eutectic phenomenon(SLaLa<SMM); At 40℃, just the opposite.
