The serious situation of new century is facing a problem for breakfast that which is in a state of sub-health, population aging, dietary diseases younger and generalization. And diet is faced with functional and health challenges. Based on the advantage of rich resources of grain in our country, Study the nutritional breakfast product to maintain and promote human health, and prosperity-develop the food market is of great significance. Our study aimed to design the nutritional breakfast for the special groups, the High-fiber hypoglycemic coarse grains powder for old people and the beneficial grains powder for Sub-health crowd.According to the requirements of the special groups of dietary nutrition, combined with the modern Chinese medicine theory, The appropriate grain was chosen as material for the production of puffed cereals powder. The formula of the series of product was computed with the linear programming by the Excel program. The formula of the High-fiber hypoglycemic coarse grains powder was: Buckwheat 60%, pumpkin 60%, rice20.89%, black sesame seed 0.89%, black beans16.22%. The formula of the beneficial grains powder was: Yam 5%, purple potato 5.02%, millet 17.33%, jujube 10.92% red beans48.22%, peanut 13.12%.On the basis of the design for formula, consideration of the minerals and vitamins concentration in the materials and the wastage during extrusion, the addition concentration of fortifier to the puffed cereals powder was determined.400mg/100 g calcium carbonate,7.5 mg/100 g ferrous lactate, 6.5 mg/100 g zinc lactate,0.3 mg/100 g vitamin B1, 0.3mg/100 g vitamin B2, 8g/kg Xylitol for the High-fiber hypoglycemic coarse grains powder; 600mg/100 g calcium carbonate,9 mg/100 g ferrous lactate, 5 mg/100 g zinc lactate,0.3 mg/100 g vitamin B1, 0.3mg/100 g vitamin B2,6.5 g/kg Xylitol for the beneficial grains powder.By the single factor test and Orthogonal test, proper extrusion parameters are obtained to spray drying : 25%Pulp concentration, 190 ? inlet temperature, 0.9 L/h feed flow rate. And compared the quality of spray drying and vacuum freeze drying, There was so little difference between the two drying methods. Considering the cost of production and storage stability, comprehensive practicing, spray drying was selected.Through product features research, comparing with two commercially available similar products, series of coarse grain powder reinforcement function factor rutin, suitable for different people, special products are unique. In gelatinization degree, blunt tonality characteristic indexes, contrast the series of coarse grain powder with commercially available products, product quality in line with the industry standard. Through accelerated test, using the method of ASLT was carried out on the product shelf life prediction, the shelf life of product was finally determined for 8 months...
