Tea is regarded as a kind of popular drink,and the health benefits of tea get more and more attention.Therefore,it is important to purify the tea compounds,and further investigate on the healthy mechanism.Fu brick tea belongs to post-fermented tea.Pile-Fermentation is one of the most important processing,during which microorganisms contributes to the conversion of tea contents,and forms the unique mellow smooth characteristics.Keemun black tea is famous for its characteristic aroma-Keemun savory.During the fermentation process of black tea,the polyphenols were oxidized to form thearubigins,theaflavins,and other components.Zijuan tea gets increasingly attention because of its large amount of anthocyanin,which performed anti-tumor,anti-aging and radioresistance.HPLC-HRMS(High performance liquid chromatography-high resolution mass spectrometry)performed with fewer amounts of samples,less time consuming,and more comprehensive analysis compared with traditional phytochemistry.Our study applied HPLC-HRMS to identify the compounds in three kinds of tea,including Zijuan tea,Keemun black tea,and Fu brick tea.After the collection of data,we tried to identify these components based on TMDB and other online database.Our study provided guidelines for further purification and identification of targeted compounds,and establishment of better HPLC-HRMS finger-print of tea.In this study,we applied HPLC-HRMS(High performance liquid chromatographyhigh resolution mass spectrometry,HPLC-HRMS)to investigate the chemical composition of Fu brick tea,Keemun black tea,and Zijuan tea.The main content of the research in this experiment is as follows:1,Our study identified the biochemical compounds in Fu brick tea,Keemun black tea,and Zijuan tea by HPLC-HRMS.And four compounds were first reported in Fu brick tea.One compound was first reported in black tea.2,Some B ring fission catechins were identified as catechin derivatives in Fu brick tea,including teadenol A and teadenol B,which performed excellent bioactivities.Then EGCG3’’Me and ECG’’Me were identified in Fu brick tea.Theaflavin and theaflavin-3,3’-digallate(TF3)were also determined in black tea,which not only contributed to infusion color,but were also associated with antioxidant,anticancer,and prevention of cardiovascular and cerebrovascular disease.Then EGCG3’’Me andECG3’’Me in Zijuan tea were reported able to be quickly absorbed by the body and consequently performed benefits.3,The compounds in Zijuan tea,Keemun black tea and Fu brick tea were determined by HPLC-HRMS with function assay with compounds,which could quickly identify the key functional biomarkers in teas.
