This experiment was focus on high-quality indica Huanghuazhan,adjusting sample harvested newly into different temperatures(10℃、20℃、35℃),different moistures(13.5%、14.5%、15.5%),tracked indicators that may be closely related to the after-ripening densly.During storage later,the sample was storaged in different temperatures(15℃、20℃、25℃、30℃、35℃)、different moistures(13.5%、14.5%、15.5%),also set atmosphere groups at 25℃、30℃、35℃,regularly sampled for rice quality index such as germination rate、FN、fatty acid value、the content of soluble amylose and so on.Thus obtaining variation of quality indicators over time,judging the Huanghuazhan has obvious after-ripening,filtering out the sensitive index that can character quality changes during storage,and observing the effection of the environmental conditions on storage quality.The results showed that:1.During the test of after-ripening,the indicators such as pasting properties of rice、germination rate、FN、conductivity、fatty acid value、lipase activity changes obviously;Huanghuazhan showed obvious after-ripening,about 20 d at 35℃ in all three moisture content,but unable to judge at 20℃ and 10℃.By LSD multiple variance analysis,founding that temperature has a significant influence on changes in indicators,but the influence of moisture did not significantly reflected.2.During later storage,the appearance、taste、composite score of rice declined obviously,hardness of rice was on the rise during storage but changed slightly.Through correlation analysis,the germination rate、FN、the fatty acid and the content of soluble amylose significantly associated with quality of rice.Taking into account the actual situation,thus determining the germination rate、FN、the content of soluble amylose can be used as sensitive indexs of high-quality indica Huanghuazhan to evaluate storage quality.3.The indicators such as germination rate、conductivity、FN、fatty acid value but the content of soluble amylose changes obviously.The FN、fatty acid value all gone up,germination rate and the content of soluble amylose presented down trend.the temperature and the moisture content have effection on germination rate、FN、fatty acid value,but not conductivity and the content of soluble amylose.At 15℃ and 20℃,indicators changes smoothly;at high the temperature indicators changes obviously;at 30℃,the higher the moisture content,the less the time germination rate down to 0;At 35℃,the higher the moisture content,the faster the indicators changed.At 25℃ the change of indicators intervene the high temperature and low temperature.The effect of nitrogen controlled atmosphere controlled by storage conditions.4.By LSD multiple variance analysis,temperature has a great influence on germination rate、FN and soluble amylose content;the influence of the moisture content on soluble starch does not reach a significant degree,but obvious on germination rate、FN.Changes of these sensitive indicators had not a significant difference between the non-atmosphere and atmosphere.
