| By using the Chinese total dietary study method,the analytical samples were obtained in different provinces by food consumption survey,food aggregation,food sampling and preparation.In order to assess the inorganic arsenic(iAs)intakes in the most of Chinese areas’ diet,we carried out Chinese total diet study(TDS)in 2009 and obtained the data of inorganic arsenic contents and intakes in dietary foods,and then assessed the safety of inorganic arsenic in Chinese dietary.The levels of dietary iAs were determined by high performance liquid chromatography and inductively coupled plasma mass spectrometry(HPLC-ICP-MS).Method validation was carried out through detecting grains and aquatic product samples.The linearity range ranged from 0 to 100.0 μg/L,and the correlation coefficient is 0.9999.The detection limit was 0.4~1.2 μg/L,the relative standard deviation(RSD)was less than 5%.It was found that the concentration of inorganic arsenic in all food samples did not exceed the tolerance limits of Chinese national standards.The concentration of inorganic arsenic in the 240 dietery samples which collected from 20 provinces was found to be between ND to 31.09 μg/kg and the decetion rate was more than 97%.The concentration of inorganic arsenic in the dairy products of some provinces was too low to detect,and we assumed the concentration to be half of the LOD.The content of inorganic arsenic in the most dietery samples was at a low level,but the level of inorganic arsenic in cereal,suger,beans and potato was relatively high.The largest contribution to the intake of inorganic arsenic in dietery was cereal,and the mean dietary inorganic arsenic intakes(of PMTDI)of the adult of 20 provinces was from 0.117 to 0.502 μg/kg.bw/day,accounting for about 59% of the total intakes,followed by drink and vegetable,which were 0.000~0.186 μg/kg.bw/day(about 15%)and 0.014~0.099 μg/kg.bw/day(about 10%),respectively.A total of 97 cereals samples which collected from 15 Province and 92 aquatic samples which collected from 20 Province were detected.The average of inorganic arsenic in cereals was higher than that in aquatic samples.The concentrations of inorganic arsenic in cereals varied from 2.00 to 45.05 μg/kg,with the mean content of 13.24 μg/kg and the median content of 10.01 μg/kg.The concentrations of inorganic arsenic of cereals samples varied from 11.34 to 45.05 μg/kg.The concentrations of inorganic arsenic of aquatic samples varied from 0.92 to 98.82 μg/kg,with the mean content of 11.97μg/kg and the median content of 8.16μg/kg.The mean dietary inorganic arsenic intakes(of PMTDI)in adults of twenty provinces were Heilongjiang 0.177 μg(8.26%)、Liaoning 0.595 μg(27.78%)、Hebei 0.334 μg(15.62%)、Beijing 0.582 μg(27.20%)、Jilin 0.683 μg(31.91%)、Shanxi 0.300 μg(14.03%)、Henan 0.445 μg(20.77%)、Ningxia 0.391 μg(18.26%)、Neimenggu 0.414 μg(19.34%)、Qinghai 0.354 μg(16.52%)、Shanghai 0.392 μg(18.31%)、Fujian 0.470 μg(21.96%)、Jiangxi 0.514 μg(24.04%)、Jiangsu 0.361 μg(16.88%)、Zhejiang 0.415 μg(19.41%)、Hubei 0.579 μg(27.06%)、Sichuan 0.426 μg(19.92%)、Guangxi 0.710 μg(33.19%)、Hunan 0.560 μg(26.15%)、Guangdong 0.301 μg(4.05%).Dietary intakes of inorganic arsenic varied between 0.177 to 0.710 μg/kg.bw/day,occupying about 8.26 to 33.19% of PMTDI defined by JECFA.The data of the whole country was 0.450 μg/kg.bw/day(21.03%)in average and 0.421 μg/kg.bw/day(19.67%)in median.In accordance with the BMDL by EFSA,the MOE of inorganic arsenic varied from 4.2 to 17.0,with the mean MOE of 7.4 and the median MOE of 7.1,respectively.The result showes that the inorganic arsenic intakes of Chinese people are safe.The results from the 5th TDS were similar to results from the 4th TDS,and little different from the 3th TDS.The inorganic arsenic intakes in Chinese people are safe,the main sources of inorganic arsenic are cereals,vegetables and drinks. |
