Actinidia arguta, which is also known as soft date, belongs to Actinidiaceae, Actinidia Lindl, is a kind of perennial deciduous vines. The nutritional of Actinidia arguta is very high, rich in vitamin C,also has various kinds of amino acid in it, has effective anti-Oxidant, anti-aging, preventing cardiovascular disease and anti-tumor efficacy.The test selected the suitable raw materials for fermentation including suitable glucide and yeast by controlling the single variable, then determine the main factors of fermentation by using orthogonal test and study the oxidation ability of Actinidia arguta wine, the experimental results are as follows:1. The best raw materials to brew wine is cultivated Actinidia arguta, choose honey to be the fermentation glucide and yeast Fermivin as fermentation yeast.2. Using cultivated Actinidia arguta as raw materials, adding yeast Fermivin, honey as glucide, and adding 100 ppm sodium thiosulfate, the initial glucide concentration of 25, set the temperature 16 degrees and add yeast 0.4%, the brewing wine present better taste and flavor.3. DPPH、·H and ·O2- scavenging activity of Actinidia arguta, the total antioxidant capacity of Actinidia arguta wine shown a strong oxidizing.
