This paper, taking black rice, oats and ormosia as the main raw materials to make a tasty and nutritional instant cereal powder, using type FMEH36 twin-screw extrusion machine for raw material powder extrusion, studying the ratio of extruded materials powder and basic formula, and using the response surface analysis to optimize the extrusion process parameters, provided certain theoretical basis for practical production and processing.The main research results are as follows:(1) Taking black rice, oats and ormosia as raw material, taking the puffing degree, water absorption index(WAI) and sensory score as evaluation index, and then the single factor experiment was carried out to ascertain the best proportion of three kinds of raw materials is 7:2:1;Ascertaining the sequence of the three factors that affect sensory score of products by sensory evaluation, the orthogonal experiment and the results of variance analysis:sugar addition> chopped almonds addition>powdered milk addition, and the optimal formula of product is chopped almonds addition 2%, sugar addition 8%, powdered milk addition 7%.(2) Under the condition of that the proportion for the black rice, oats, ormosia is 10:4:1, and that the ratio of chopped almonds addition,sugar addition, and powdered milk is 2%,8% and 7%, the effect of material particle size, ? zone temperature, ? zone temperature and screw rotation speed on puffing degree and water absorption index of products was studied. According to the results of the response surface analysis, the optimal extrusion conditions are as follows:the material particle size is 60 mesh, ? zone temperature is 106?, ? zone temperature is 124?, the screw rotation speed is 173 rpm. Using the optimal extrusion processing parameters, the puffing degree of product is 3.21 and the water absorption index is 5.03, it is of great practical value in production.(3) The sensory index test, nutrition index test, physical and chemical index test, microbial index test were carried out on the instant cereal powder, the index meet the standard of LS/T 3302-3302 "convenient grain powder". Therefore, instant cereal powder is a kind of safety food which is of good quality.
