Natural pigments,like monascus and lycopene,have good health care,such as anti-inflammatory and sterilization,anti-pyretic detoxicate,activating blood circulation and anti-cancer,lowering blood fat,reatment of gastrointestinal diseases,adding the body of nutrients,enhancing immunity and so on.However,the weak stability limits their promotion and application;insolubility of water leads to hard use in water-media applications.Therefore,the physical or chemical modification for them is particularly necessary.The topic selected the monascus pigment and lycopene as the objects of study.Adopted the parmaceutic preparation to settle their lacks of water solubility and stability.To prepare monascus pigment microcapsules by spray drying,and evaluate the quality of it.To investigate the influences of different prescription and preparation factors,with loading capacity and encapsulation efficiency as overall indicatrix.The optimal condition of preparation was as follows:the ratio of core material to coating material was 1:9,ethanol to water was 1:9,the amount of dissolvent was 80 mL,the temperature of water-bath was 50℃,spray pressure was 0.1 MPa,feeding rate was 5.2 mL/min,inlet air temperature was 110℃,air flow rate was 420 L/min.The appearances of microcapsules were good.The average loading capacity,encapsulation efficiency and particle size of microcapsules were 9.83%,68.36%and 1.93 μm.The water-solubility of monascus pigment in microcapsule was 1 397.71 μg/mL compared to 88.89 μg/mL of original monascus pigment.The survival rate of monascus pigment had been enhanced in different conditions.Lycopene microcapsules was also prepared by spray drying,using the value of overall desirability to evaluate qualities in single-factor and Box-Behnken optimal tests.The final optimal condition of preparation was as follows:the ratio of maltodextrin to arabic gum was 0.55,the core material compared to coating material was 1:9,the value of HLB was 10.5,the dosage of surfactant was 0.20 g,the ratio of acetone to water was 1:4,the amount of dissolvent was 100 mL,the temperature of water-bath was 40℃,inlet air temperature was 124℃,air flow rate was 595 L/min,spray pressure was 0.1 MPa,feeding rate was 5.2 mL/min.The structure of microcapsules was obvious.Its average particle size was 3.03 μm.The loading capacity and encapsulation efficiency were(9.62±0.11)%,(77.92±2.42)%.The water-solubility of lycopene in microcapsule was 69.68 μg/mL compared to 15.5 μg/mL of original lycopene.In different conditions,the survival rate of lycopene had been enhanced.The preparation of monascus pigment and lycopene microcapsules with spray drying has improved their water solubilities and stabilities,expanding their applications and life cycles.They presented great value.In addition,the spray-drying technology has good controllability,also it’s easy to achieve industrial-scale production. |
