| This thesis takes commercially white geese as raw materials,determinates fat and fatty acid composition of each part of white geese,then measures basic physical and chemical properties of goose oil made from the goose skin which is treated by washing,draining,chopping,and heated by oil(triglyceride,140℃-170℃).Taking the basic physicochemical properties and fatty acid composition of goose oil as evaluation index,the thesis also investigates the impacts of different storage conditions and different antioxidants on the quality of goose oil.Based on that,the thesis studies the effects of goose oil and other animal and vegetable oil on blood lipid of OVX rats,and comparatively studies the effects of the antioxidant goose oil on OVX rats’ antioxidant capacity by adding it or not.Finally,we hope to have a understanding of the basic properties and fatty acid composition of goose oil,and the impacts of storage conditions on goose oil quality,as well as the influence of goose oil on rats’ blood lipid and antioxidant while the rats’ ovaries were removed,which can provide theoretical basis for production and processing of goose oil and so on.The main research conclusions are as follows:1.The content of goose fat varies a lot in different parts of white geese.Goose fat is mainly distributed in the skin and abdomen,while rarely distributed in muscle.By measuring,fat content in goose chest muscle is 2%,20% in the wings,while is up to about 60% in the goose skin in the chest and leg.At the same time,the fatty acid composition varies in different parts of goose,the content of fat in abdomen,palmitic acid and stearic acid in the skin and wings is higher than in the legs and chest muscles,while the content of oleic acid and linolenic acid in abdomen fat and chest muscle fat is higher than in other parts.2.Physical and chemical properties such as acid value,peroxide value,color and luster,and fatty acid composition changes(relative percentage)of goose oil were taken as evaluation indexes to analyze the influence of illumination,temperature,air,and antioxidant on the stability of goose oil.Results indicate that the high temperature,light and air contacting will cause faster increasing of acid value and peroxide value of goose oil,while the decreasing of the relative content of unsaturated fatty acid.The higher the temperature is,the faster indexes change.Meanwhile,the high temperature can deepen the color of oil,but the light and air contacting can shallow it.Tea polyphenols has a better effect on maintaining the stability of goose oil than VE.Namely,low temperature,away from light,absence of air and adding antioxidant tea polyphenols play a positive role in keeping the nature of the goose oil.3.The research of the influence of different oils including the goose oil,lard,soybean oil and olive oil in OVX rats blood fat,the results show that the goose oil group TC content is slightly higher than the oil of the olive group but the TG,LDL,HDL-C-C content is no obvious difference with olive oil group,but significantly lower than that of soybean oil and lard group.feeding goose oil or olive oil makes ovx rats intestinal contents and feces of bile acid content increased.Through the determination of fatty liver and serum of OVX,it is known that olive oil and goose oil have less damage on rats liver..By biopsy of liver tissue morphology,we can learned that there is appearance of fatty liver in OVX rats,and there is apparent and abundant fat in the liver biopsy,but the morphology of goose oil and olive oil group are similar with pseudo excision group,while the arrangement of soybean oil and lard group cell is relatively loose,the cell is bigger,and intercellular space increased.in conclusion,the intake of goose oil or olive oil has a certain inhibitory effect on hyperlipidemia and fatty liver in OVX rats4.Through the determination of antioxidant index of rat,we can learned that compared with soybean oil and lard oil,the goose oil can improve HL and LPL activity of OVX rats,and also can increase the activity of SOD,T-AOC and GSH-Px,at the same time reduce the concentration of MDA,promote the decomposition of liver lipid,resisting lipid peroxidation,reduce the damage of lipid peroxidation for cell,protecting liver cells to work properly,play a positive role in promoting the fat metabolism.So the oxidation resistance of goose oil group with antioxidant slightly better than goose oil group rats,has the certain positive role. |
