Cyclodextrin can be modified by esterification reaction to improve its emulsifying ability,so it can be used to prepare Pickering emulsion.In this study,OS-?-CD were prepared,taking ?-CD and octenyl succinic anhydride as raw materials.The formation,thermodynamic property and appearance of OS-?-CD were confirmed by the results of FT-IR,XRD,1HNMR,and SEM;solubility,particle size,surface tension,interfacial tension and activation index were tested.The results showed that solubility,particle size,surface tension,interfacial tension of OS-?-CD decreased compared with ?-CD,but activation index increased.OS-?-CD with different DS were prepared to form emulsions,particle size,zeta potential,creaming index and the influence of pH,ionic strength and temperature on emulsion were studied.OS-?-CD with higher DS had better emulsifying ability.With the increase of DS,droplet size and zeta potential of Pickering emulsion decreased.After treatment of different pH,temperature,emulsion stabilized by OS-?-CD were still stable,while emulsions under the condition of different ionic strength were unstable.The formation,thermodynamic property and appearance of OS-?-CD/curcumin inclusion complexes were confirmed by the results of FT-IR,XRD,1HNMR,DSC,SEM and CLSM.FT-IR spectrum of inclusion complex suggested peak of curc?min at 1602 cm-1 and 1281 cm-1disappeared,and peak at 1153 cm-1was weaken,which suggested curcumin reacted with OS-?-CD.XRD showed that OS-?-CD/curcumin inclusion complex was V crystal structure.The results of DSC curve indicated that OS-?-CD/curcumin inclusion complex had new material melting peak and decomposition peak,the melting peak of curcumin and the decomposition peak of OS-?-CD disappeared.The results of SEM showed that photos of OS-?-CD/curcumin inclusion complex was different from that of OS-?-CD and curcumin,it was smooth and neat with edges;spherical particles were more apparent.CLSM showed the pictures of OS-?-CD/curcumin inclusion complex could be observed with the red and green fluorescent material,green part existed in the middle of red fluorescence.These results suggested that OS-?-CD really reacted with curcumin and the curcumin presented in the cavity of the OS-?-CD.Emulsions stabilized by OS-?-CD and OS-?-CD/curcumin inclusion complex were investigated,the influence of loading form of curcumin on oxidation stability was studied.The results of particle size,particle size distribution,zeta potential and creaming index showed that OS-?-CD/curcumin inclusion complex stabilized emulsions had good physical stability.Antioxidant study included primary oxidation product and secondary oxidation product,which showed OS-?-CD/curcumin inclusion complex stabilized emulsions had good chemical stability.Curcumin at the interface of oil and water had better antioxidant effect than curcumin in fish oil.
