The vacuum microwave fixation refers to the microwave fixation under the condition of vacuum. The tea fixation is fast in the low temperature when used the vacuum microwave fixation device. It can protect heat sensitivity materials, such as color, aroma, and vitamin C, etc, that were lack of protection when only using microwave fixation device. It's good to improve the tea quality.This research was based on the fixation test that was about the vacuum microwave fixation process and other fixation processes. It provided a theoretical basis for the technical parameters of the vacuum microwave fixation device. Making a design of the continuous vacuum microwave fixation device after the detailed analysis of the working principle and function requirements of the device,especially its key parts. The main research contents and conclusions in this dissertation were as follows:1.The microwave fixation is fast and high-efficiency. The boiling point of water is reduced under the condition of vacuum, as a results, the water evaporates in high speed and the fixation time reduces once again.2.Low temperature is advantageous to the heat-sensitive substances such as amino acid, vitamin C, and also is good to improve the tea quality.3.Detailed design method of the heating chamber was analyzed. First, the minimum size of the heating chamber was based on the object size, and the maximum size was based on the heating efficiency. Second,the total microwave power was calculated on the basis of the productivity. At last, the heating chamber, the length of 1200 mm, the width of 600 mm and the height of 400 mm, was determined after some computer simulations.4.The composition of the continuous vacuum microwave fixation device was determined. Also, the structure of the tea input, output system, the tea uniformity adjustment device and the microwave suppression device was determined.5.First, studying the matching problem of microwave heating chamber with electromagnetic simulation software. Second, putting forward two microwave heating method and finding the good method in the last.
