Cordyceps militaris is one of the most important fungals,which has the function of anti-cancer,anti-aging,anti-oxidation,hypoglycemia,regulating heartbeat,dilating bronchi,anti-inflammation,immune regulation and so on.Black beans,soybeans,chickpeas and mung beans are a group of beans with rich nutrients.They are rich in unsaturated fatty acids,proteins,vitamins and trace mineral elements.Cordyceps militaris contains a large amount of cordycepin.Beans are aboundant in phenols and flavonoids.They have good antioxidant activity.Fermented legumes from Cordyceps militaris can improve the antioxidant activity,which are promising health foods.The function of fermentation legumes were studied by detecting the contents of cordycepin,phenols,flavonoids and the antioxidant activity.The results showed that fermented legumes of Cordyceps militaris significantly increased the contents of cordycepin,phenols and flavonoids.Antioxidation experiments in vitro showed that the fermentation of Cordyceps militaris could greatly enhance the antioxidant activity of legumes,including the scavenging power of DPPH free radical,ABTS radical scavenging ability and Fe3+ reducing antioxidant power.It was found that with the increase of fermentation time,the antioxidant capacity gradually increased,and the effect of fermentation for 30 days was the best.Whats more,the antioxidant ability increased with the increasing concentration of beans' water extract.In addition,the fermentation of Cordyceps militaris can enhance the inhibitory activity of four legumes on angiotensin converting enzyme.Besides,we studied the effect of fermented black beans on the activity of superoxide dismutase(SOD)in juvenile zebrafish.It was found that the water extract of black beans could reduce the activity of superoxide dismutase(SOD)in juvenile zebrafish fed high fat diet.Finally,the single factor experiments showed that yeast extract and glucose were the main factors affecting the yield of cordycepin,phenols and flavonoids,and the yield could be increased by optimizing the addition of these two substances.
