Fuqing goat is one of the meat type goats in China.It is a good local variety in Fujian province.A survey on the characteristics of Fuqing goats showed that the total number of goats in Fuqing was 43172,including 26053 rams and 17116 ewes In 2016.The total number of adult rams is 20138,accounting for 46.64%of the total group,and 9856 of the breeding ewes,accounting for 22.83%of the whole group.Fuqing goat hair color is usually brown or gray brown shades,The upper face and nose has a slightly triangular black hair,extending from the spine to the back,There is a strip of black hairs with black hair under the wrist,the tarsal joint and the rump.The color of the abdomen is different,most of them are black.Study on meat quality of Fuqing goats showed that there was no significant difference in physical and chemical properties of Fuqing goat meat(P>0.05).Fuqing goat(male)in meat color,marbling and water loss rate is higher than that of Fuqing goat(female).Physical and chemical properties of goat meat in different parts of Fuqing goat,There is a significant difference in meat and marbling values(P<0.05)or extremely significant(P<0.01),The three muscles of the arm were significantly higher than the longest dorsi and two femoris.but it still belongs to the normal range.The longest muscle in the marbled back was significantly higher than that of the two head of the femoris,There is no significant difference between the triceps and brachial triceps(P>0.05).There was no significant difference between the sites of the water loss rate,The water loss rate of the longest dorsal muscle was higher than that of the arm triceps and the triceps.There was no significant difference in the diameter of muscle fiber and the cross sectional area between different sex and different parts(P>0.05).The difference of muscle fiber density only between homosexual differences(P<0.01),The muscle fiber density of Fuqing goat ewes is significantly higher than that of goats,muscle tenderness is higher than goats.The density of the musculus dorsi was higher than that of the brachial triceps and two biceps femoris.In addition,the muscle fiber density of Fuqing goat meat has a significant sex*site interaction.The result of multiple comparisons by horizontal combinations is:Fuqing goat(female)longissimus muscle>Fuqing ewes(female)unit two biceps>The musculus triceps of Fuqing ewes>the longest muscle of Fuqing RAM>Two head of Fuqing rams>triceps of Fuqing ram arm.There were significant differences in physical and chemical properties of meat products in pHl,pH24,meat color,water loss rate and water rate between Fuqing goats and Boer Goats.The pHl value of Fuqing goats was significantly higher than that of Boer Goats;The pH24 value of Fuqing goats was significantly higher than Boer Goat;Fuqing goat meat color is significantly higher than Boer Goat,The water loss rate of Fuqing goats was significantly lower than that of Boer goats.There is no significant difference between marbling and cooked meat varieties.Study on the variety characteristics and meat flavor of Fuqing goats and the internal mechanism and the small smell of fresh meat,Provide the basis for the further development and utilization of Fuqing goats.
