High internal phase emulsion(HIPE)is a kind of superconcentrated emulsion and its volume fraction of dispersion phase is more than seventy percent.This kind of emulsion gives the liquid grease solid properties in the form of gel.Therefore,it has a very wide application prospect in food?medicine and cosmetic field.Zein is the main constituent of corn protein and it's also a kind of amphipathic which has unique self-assembly properties and biocompatibility.The paper is carried out arounding with zein's self-assembly,fabricated complex colloidal particles with excellent interface performance,and the first time successfully fabricated stable High internal phase emulsion by colloidal particles and further utilizing the emulsion to load bioactive substance,the conclusions are as follows:1.The zein-pectin complex colloidal particle was prepared by simple anti-solvent technology,by adjusting the pH of the colloidal particle to research its change of appearance,potential and particle size,through the three phase antennae and interface adsorption dynamics experiment to research hydrophilicity and interface properties of complex colloidal particles,utilization scanning electron microscopy and atomic force microscope observation the appearance characteristics of colloidal particle,and further moer researching the structure of particles by fourier infrared experiment.The experimental results show that the appearance of colloidal particle present circular and it's easy to flocculate.The wettability and the interface adsorption performance are affected by pH.The hydrogen bond force was formed between zein and pectin.2.Fabrication internal phase emulsion(HIPE)stabled by zein and pectin complex colloidal particle with its oil phase is up to eighty percent.Preliminary study the appearance?storage and centrifugal stability of the emulsion,and further studing the viscoelasticity of the High internal phase emulsion by rheological property analysis and thixotropic experiment,studing the distribution of colloidal particles in emulsion and the reason for the stability of the emulsion by optical microscope and laser co-focusing method.The results show that the high internal emulsion can be stable for over four months and can withstand greater centrifugal force without breaking,it has a strong structure of gel network.The microscopic structure observation indicates that the emulsion droplets are closely interlinked with each other.The experiment also indicates that the stability of the emulsion is due to the adsorption of colloidal particles to the oil droplet interface.3.Useing the High internal phase emulsion stabled by zein-pectin colloidal particles as a carrier and loading active substance curcumin,studying the physical properties of the emulsion which loaded with curcumin,and further researching the The anti-irradiation characteristics?antioxidant properties and digestive properties of the emulsion loading with curcumin.The results show that the High internal phase emulsion loading with curcumin has good rheological properties which,it indicates that the high strength gel network structure was formed in the emulsion,the emulsion also has excellent anti-irradiation characteristics and can protect the curcumin by uv radiation.The low oxidation of emulsion indicates that the emulsion has good anti-oil oxidation property,and in the process of digestion,the emulsion has higher degree of hydrolysis wihich can improve the bioavailability of curcumin.
