With the continuous improvement of people’s living standards,a higher requirement for healthy diet is also required.There are many ingredients for people to eat,such as fresh fruits and vegetables juice,soymilk,famous Chinese herbal medicine and so on.Now,we can prepare a variety of ingredients quickly and easily with emergence of high speed blender.Many companies promote their products wall-broken rate,but how to evaluate the wall-broken rate becomes the important key.At present,there are some methods for evaluate the wall-broken rate,mainly based on the microscopic observation of the characteristic cell method,but not universal applicability.The release of intracellular material after cell is broken,will have conductivity in aqueous solution.And the conductivity will be higher with higher wall-broken rate.In this study,the model of conductivity evaluation of the wall–broken rate was established by using Chlamydomonas reinhardtii FACHB-265,and then applied to beans,fruits and vegetables,Chinese herbal medicines.The main conclusions are as follows:(1)The basic physical characteristics of Chlamydomonas reinhardtii FACHB-265 was tested in TAP medium under continuous light culture conditions.At 32h,Chlamydomonas reinhardtii FACHB-265 reach the stable period.The correlation between conductivity,algal cell number,and chlorophyll content of algal fluid was found,and a model of evaluating the wall-broken rate by using conductivity was established.The conductivity can be used to evaluate the wall-broken rate quickly,accurately and conveniently.(2)In the treatment process of beans,the correlation between water soluble protein release and conductivity is relatively high(p<0.01),and water soluble protein can be used as a specific component to evaluate the wall-broken rate.Evaluate the wall-broken rate of beans by conductivity was measured at normal temperature(25℃).The wall-broken rate of four kinds of beans reached about 90%by using the high speed blender soymilk program.(3)In fresh fruits and vegetables,the stability of antioxidants and polyphenols is poor,while VC is stable to a certain extent,and VC can be used as a specific component to evaluate the wall-broken rate.The correlation between VC release and conductivity is relatively high(p<0.01,R~2=0.987).Evaluate the wall-broken rate of fresh fruits and vagetables by conductivity was measured of 15 minutes at normal temperature(25℃).(4)The ginseng protein,ginsenoside is stable in the process of high speed blender.And ginseng protein and ginsenoside can be used as a specific component to evaluate the wall–broken rate.The correlation between ginseng protein,ginsenoside and conductivity is relatively high(p<0.01).The evaluate the wall-broken rate of ginseng by conductivity was measured at normal temperature(25℃).The wall-broken rate of ginseng reached about 90%by using the high speed blender soymilk program,and the release of ginsenoside and ginsenoside is high.
