| In order to improve the comprehensive utilization value of ganoderma lucidum mycelium,We expect mainly the research and development of ganoderma lucidum mycelium solid beverage products,so as to provide theoretical basis for the production of the enterprise.The results of the study are as follows:1.The nutritional components of ganoderma lucidum mycelium were determined,the results showed that the content of the moisture,ash,protein,fat,total sugar respectively was 5.28%.2.83%.3.65%.6.89%and 42.15%.2.Using the HS-SPME and GC-MS to analysis the volatile components in ganoderma lucidum mycelium.We identified that there were 31 kinds of volatile compounds in the ganoderma lucidum mycelium mixing powder which included 12 kinds of aldehyde substances,the peak area of Aldehyde material was 35.92%;2 kinds of alcohols,the peak area of Aldehyde material was 2.45%;5 kinds of ester substance,the peak area of Aldehyde material was 2.04%;two types of acid substance,the peak area of Aldehyde material was 1.11%;The substance of the furan have 3,the peak area of Aldehyde material was 5.24%;lsort of ene.glycosideand 1 kind of ketone.3.Through the response surface design,we can conclude that the best proportion ingredients:ganorderma lucidum mycelium extract 840%、malt151%、Beta cyclodextrin 0.1%、stearic acid glycerol ester 0.35%、sucrose fatty acid ester 0.4%.sodium carboxymethyl cellulose 0.15%.4.The nutritional components of instant powder of ganoderma mycelium were determined,the results showed that the content of the moisture,ash,protein,fat,total sugar respectively was 5.13%、3.15%、4.25%、7.13%和68.57%,gfanoderma lucidwum polysaccharide is 4.67%.5.Using the HS-SPME and GC-MS to analysis the volatile components in ganoderma lucidum mycelium solid beverage.We identified that there were 23 kinds of volatile compounds in the ganoderma lucidum mycelium mixing powder which included 11 kinds of aldehyde substances,the peak area of Aldehyde material was 35.22%;4 kinds of alcohols,the peak area of Aldehyde material was 2.07%;4 kinds of ester substance,the peak area of Aldehyde material was 1.55%;The substance of the furan have 3,the peak area of Aldehyde material was 5.24%;sort of ketone.6.Ganoderma lucidum mycelium solid beverage has antioxidant effect,with the increase of Ganoderma lucidum mycelium solid beverage concentration,remove the free radical scavenging rate,reducing power ability and inhibition of lipid oxidation inhibition rate increase gradually;DPPH-,-OH and O2-and IC50 values were 0.912 mg/ml,3.173 mg/ml,0.863 mg/ml,inhibition of lipid over oxidation of the IC50 value of 6.706 mg/ml. |
