In this study,ginseng powder was used as raw material,Using a twin-screw extruder,The ginseng powder was separately extruded by designing ten types of different screws configurations.The purpose was to investigate the effect of screw configuration on physicochemical properties and ginsenosides content of extruded ginseng,and to select the optimal screw configuration for twin-screw extrusion.In this study,The extrusion parameters were set as follows:barrel temperature of 140℃;screw speed of 200 rpm;moisture content of 20%,and feeding rate of 100 g/min.The main findings are as follows:Screw configuration 3(on the basis of the comparison screw,it was replaced with 5 positive kneading elements at a distance of 6 cm from the die)The extruded ginseng of had the lowest breaking strength,bulk density and water absorption index,and the water solubility index was the highest at 55.84%,The water solubility index of ginseng powder increased by 43.12%compared with that before extrusion,which was most suitable for the development of ginseng extract products.Screw configuration 6(on the basis of the comparison screw,replace 3&2 positive kneading elements at 0&9 cm from the die)The extruded ginseng of had the highest DPPH free radical scavenging rate,reducing power and total phenol,which was most suitable for the development of ginseng antioxidant products.Screw configuration 9(on the basis of the comparison screw,replace 3&2 positive kneading elements at 3&9 cm from the die)The content of triol-type monomer ginsenosides(Rg1,Rf)was significantly reduced,and the content of diol-type monomer saponins(Rb1,Rb2,Rc,Rd,Rg3)was the highest.The extruded ginseng had the highest content of total ginsenosides,and the content of rare ginsenoside Rg3 which was scarcely present in the ginseng raw material powder was significantly increased,The expected twin-screw extrusion process enables the mutual conversion between ginsenosides and rare ginsenoside Rg3.In this paper,the effects of screw configuration on the physicochemical properties and ginsenosides content of twin-screw extruded ginseng were investigated,the screw proper for processing ginseng products was selected.This study promotes the development and utilization of ginseng,Important for the sustainable development of the ginseng industry.To provide a theoretical basis for the development of a new twin-screw extruder for the design of the screw configuration of twin-screw extruded ginseng.
