Starch sugar is a kind of corn or corn starch as raw material through a series of processes such as isomerization,ion exchange,filtration,concentration and so on,its main components are fructose and glucose,so it is also called fructose syrup,starch sugar is viscous liquid,most colorless transparent.Because of its special characteristics,starch sugar is widely used in beverage,candy,baking,wine and other industries.According to the statistics of enterprises in the statement of the association,the total output of starch and sugar in 2017 was 11.78 million tons,an increase of 15.16% over the previous year.Expanding domestic starch sugar market demand,market demand is higher and higher,to the character of the starch sugar and starch sugar production enterprises in domestic,due to the production of starch sugar in China starts late,starch sugar enterprises still lags behind that of developed countries in terms of product standardization,production enterprises have different technical jagged,starch sugar causes the market quality good and bad are intermingled,greatly limits the development of starch sugar industry.Standardization is the basis and guarantee of quality supervision of food production enterprises.In order to comprehensively guarantee the safety of food,food enterprises should work under the guidance of standardization in the whole process from the purchase of raw materials to the sale of finished products from the factory.In 2015 promulgated the national food safety standards starch sugar after implementation of enterprises have played an important role in indicating specification on the product indicators,but the light on the national standard in the article "getting started" guide is far from enough,in order to produce higher standards,more secure starch sugar need to enterprise itself from standardization,tougher,scientific system of a set of standards,and overall improve the starch sugar industry,the benefit of society.In this paper by means of some starch sugar production enterprise in xiamen,field investigations,access to information,technical consulting and other methods,from the production of starch sugar,from raw materials procurement to finished product sales,for each step of a link to the corresponding corresponding standardized procedures,process and analyze the influence on the quality of starch sugar,and standardization and the relevance of the traceability system.This paper specifically studies from five modules,namely,raw and auxiliary material standardization,production standardization,finished product testing standardization,auxiliary standards,and the application of traceability system.After a month of continuous testing of the finished products,the solids of starch sugar(76.5-77%),pH(3.3-4.5),fructose content(55-58%),fructose fructose content and glucose levels(?95%),color values(?20RBU),temperature(16-35?),the total number of colonies(?400 cfu/ml),and other indicators of measurement,the results are accord with a standard,controlling system on standardized product quality can be guaranteed.The standardization of starch and sugar enterprises is of great significance to guarantee the quality of starch and sugar.It can infiltrate the management of starch and sugar production enterprises in a scientific and systematic way and is the basic guarantee of the quality of starch and sugar.
