With the advancement of technology,people are increasingly demanding food quality.Conventional food preservation and freezing methods have been gradually eliminated due to the loss of food quality.The influence of auxiliary storage methods such as magnetic field and electric field on the non-thermal effect of food has received extensive attention.In order to analyze the effects of magnetic fields and electric fields on food preservation and freezing,the following studies have been carried out:(1)The magnetic field and electric field experimental device was designed and simulated,and the solution suitable for being mounted in the refrigerator was selected.(2)The effects of different magnetic field strengths on deionized water and physiological saline freezing curves were tested.(3)Exploring the influence of different magnetic fields and electric field strength on the quality of spinach storage process.(4)Exploring the effects of different magnetic fields and electric field strength on beef freezing curve and quality.By analyzing the above contents,we get some conclusions:(1)When the magnetic field strength is 50 GS,100GS and 150 GS,there is no effect on the deionized water freezing process.The physiological saline test results show that the three intensity magnetic fields shorten the freezing time of physiological saline,the50 GS magnetic field has the greatest effect,followed by 100 GS,and the 150 GS magnetic field also accelerates the freezing process but has little effect.(2)Spinach was treated with 40 GS,60GS,80 GS and 100 GS magnetic fields respectively.It was found that the magnetic field of 40 GS intensity had a positive effecton the storage of spinach,while the magnetic field of other strength accelerated the corruption of spinach.The 50kv/m electric field has a bad influence on the preservation of spinach,and the 100kv/m electric field has no effect on the preservation process of spinach.(3)The 50 GS,100GS and 150 GS magnetic fields were used respectively to treat the beef when it was frozen.It was found that the 50 GS magnetic field can accelerate the freezing of beef,and the quality of beef is better.The 100 GS and 150 GS magnetic fields delay the beef freezing process and are of lower quality than untreated beef.The 50kv/m electric field has a bad influence on the beef freezing process and quality,while the100kv/m electric field has no effect on the beef freezing process and quality.
