Polygonati rhizoma is dry rhizome of liliaceous plant,including Polygonatum kingianum Coll.et Hemsl.,Polygonatum sibiricum red and Polygonatum cyrtonema Hua.Gardeniae fructus is the fruit of Gardenia jasminoides ellis.Polygonati rhizoma and Gardenia jasminoides ellis are traditional Chinese medicines,and serve as food and raw materials for the pharm acetutical industry as approved by the Department of Health.There are a lot of studies on the Polygonati rhizoma and Gardenia jasminoides ellis in the field of traditional Chinese medicine planting and cultivation.Although widely cultivated,they are mostly used as medicinal materials and only in some parts of China,they are eaten as food by local people.However,they have not been well used as food raw materials in industrial production,and because of their low added value,they are only eaten as primary products in a small range.With the improvement of people’s living standard,the food with health-care function has received great attention.Nutritional and health functions of Rhizoma polygonati polysaccharide and Geniposide have also attracted people’s attention.The consumption of paste also shows regional and seasonal characteristics.It is of great significance for the development and utilization of Polygonati rhizoma and Gardenia jasminoides ellis.In this study,Rhizoma polygonati polysaccharide and gardenoside were extracted from Polygonati rhizoma and Gardenia jasminoides ellis,The compound paste of Polygonati rhizoma and Gardenia jasminoides ellis,a new functional food,was developed.In this paper,the decompression extraction conditions of Polygonatum sibiricum and Gardenia jasminoides were studied.The key technology of the production process of Polygonati rhizoma and Gardeniae fructus paste is also studied.The main research results are as follows:1、The decompression extraction technology of Polygonatum Rhizoma polygonati polysaccharide was determined.On the basis of the single factor experiment,through four factors and three levels of orthogonal experiment,taking the content of Rhizoma polygonati polysaccharide of Polygonati rhizoma as the evaluation index.the effects of different conditions on the content of polysaccharide in flavin were studied.The optimum extraction parameters under the pressure reduction extraction of Polygonati rhizoma was determined as follows:extraction pressure 0.075 Mpa,extraction temperature 75℃,and the extraction time 8 min,and solid-liquid ratio 1:12.The content of Rhizoma polygonati polysaccharide is 9.51%.2、The decompression extraction technology of Geniposide was determined.,On the basis of the single factor experiment,through four factors and three levels of orthogonal test optimization,taking the content of gardenoside as the assessment index,the effects of different conditions on the content of gardenoside were studied.The optimum technological parameters for extracting gardenia under vacuum extraction was determined as follows: extraction pressure 0.07 Mpa,extraction temperature 60 ℃,and solid-liquid ratio 1:12 and extraction times 2.The content of gardenoside is 2.59%.3、The quality ratio of Polygonati rhizoma paste and Gardenia jasminoides ellis paste,and the addition amount of oligoisomaltose powder and maltitol in the formulation of compound ointment of Polygonati rhizoma and Gardenia jasminoides ellis were studied.Then by testing the texture characteristics of hardness,consistency,cohesiveness and viscous index,the quality of compound ointment of Polygonati rhizoma paste and Gardenia jasminoides ellis paste was accurately expressed by data.After principal component analysis and response surface analysis,the standardized comprehensive score is taken as the evaluation index.The best formula was: the mass ratio of Polygonati rhizoma paste and Gardenia jasminoides ellis paste 53:47、The addition amount of oligoiso-maltose powder 40%、maltitol added at 31%,the standardized comprehensive score is 0.982,which is basically consistent with the predicted value.Though the response surface optimization experiment,the order of the influence of each factor on the sensory score of Polygonati rhizoma and Gardenia jasminoides ellis compound paste was determined :amount of maltitol addition>amount of oligoisomaltose addition>mass ratio of the essence of Polygonati rhizoma paste and Gardenia jasminoides ellis paste.The Polygonati rhizoma and Gardenia jasminoides ellis compound paste which is in suitable color,smell and structure can be obtained by this technology.4、Through the detection of sensory index,physicochemical index and microbial index of Polygonati rhizoma and Gardenia jasminoides ellis compound paste,the detection indexes of functional components in Polygonati rhizoma and Gardenia jasminoides ellis compound paste were determined,the content of Rhizoma polygonati polysaccharide was≥3.0%,the content of gardenoside was≥1.0%,and the implementation standard of the product was worked out.
