| Honey to the traditional food in our country,to protect the rights and interests of consumers,strengthen the market quality of honey and honey adulteration make accrrrate judgment,the study of modem testing technology is the main practical significance.The main contents and results of this study are as follows:To optimize the method for identification of honey adulteration by liquid chromatography/elementaiy analysis-isotope ratio mass spectrometry According to EU standard method,theliquid chromatography conditions were optimized and element analyzer-isotopic mass spectrometry werecombined.Disaccharide wasseparated into maltose and sucrose.A new parameter,δ13C difference between maltose and sucrose(δ,3CM-s),was presented.Based on the isotopic data of 113 authentic honeys from different sources at home and abroad,theδ13C value limits for the authentic honeys were proposed:δ13C difference between honey and protein(δ13Cp-H)was more than-0.97‰,δ13C difference between fructose and glucose(δ13CF-G)was from-0.60‰ to 0.56‰,δ13CM-S was from-0.73‰ to 0.98‰ and the maximum difference between all δ13C values should be less than 2.05‰(δ13Cmax<2.05‰).Under the pure honey criteria,the positive percentage by the new method was 21.9%for 160 commercial samples,while the positive percentage by the old method was only 16.2%.This study improves the detection ability of honey adulteration,which is better and more accurate to combat adulteration,while maintaining the rights and interests of consumers. |
