The purpose of this study was to determine the differences of slaughter performance and meat quality of Wulate goats in different regions(Hulestai,Xinhure,Wulan and Wengeng)by measuring slaughter performance,edible quality and nutritional quality.Moreover,a total of 124 Wulate goats were graded by the carcass weight,backfat thickness and eye muscle area.The effects of different regions on the slaughter performance and meat quality of Wulate goats were investigated in current study,and the carcass grading standard system of Wulate goats was established to provide theoretical basis and data support for the selection of high-quality Wulate goats.The results showed that the slaughter performance of Wulate goats in Hulestai was significantly lower than other regions;The a*value of the longissimus dorsi was significantly higher than other regions(P<0.05),shear force was significantly lower than other regions(P<0.05),the content of intramuscular fat was significantly lower than other regions(P<0.05),EPA acid was significantly higher than other regions(P<0.05).In general,the meat quality of Wulate goat in Hulestai region was better than that in other regions.In addition,the Wulate goat could be divided into four grades:special grade,superior grade,good grade and available grade.by carcass weight,backfat thickness and eye muscle area.The Wulate goats with carcass weight of 27-32 kg,backfat thickness of 0.25-0.40 cm and eye muscle area of 17-22 cm2 was evaluated as the special grade,carcass weight of 23-27 kg,backfat thickness of 0.19-0.25 cm and eye muscle area of 14-17 cm2 was evaluated as the superior grade,carcass weight of 19-23 kg,backfat thickness of 0.14-0.19 cm and eye muscle area of 11-14 cm2 was evaluated as the good grade,carcass weight of 17-19 kg,backfat thickness of 0.10-0.14 cm and eye muscle area of 8-11 cm2 was evaluated as the available grade.
