The contents of tocopherols,tocotrienols,y-oryzanols,y-aminobutyric acid,ferulic acid of brown rice(BR)or refined white rice(WR),germinated brown rice(GBR)which are bioactive and health-beneficial ingredients,are investigated and compared.In this study,reversed-phase high performance liquid chromatography(HPLC)or high performance liquid chromatography-mass spectrometry(HPLC-MS)was used to study the content changes and distribution of the four main types bioactive components in GBR at different germination time compared to BR and WR.After the germination of BR is completed,the sprout was cut and separated,and the sprout accounts for about 9.8%of the quality of the whole GBRAfter BR germinated at 30? for 24 h,the contents of ?-,?+?-,?-tocopherol and?-,?+?-,?-tocotrienol reached the highest level in GBR,respectively 215.13 mg/kg,8.00 mg/kg,0.18 mg/kg,22.88 mg/kg,42.46 mg/kg and 6.03 mg/kg.The total amount of tocopherols and tocotrienols in the whole GBR was 156.89 mg/kg higher than BR,an increase of 113.9%and was 250.30 mg/kg higher than white rice,or increase of 560%.The total amount of tocopherols and tocotrienols in the sprout of GBR was 1214.27 mg/kg higher than that of GBR,and the sprout contributed 43.9%to the whole GBR.In addition,when germinated at 30? for 18 h,the total content of y-oryzanol in the GBR was 5.29 mg/kg,which was increased by 0.83 mg/kg compared to BR,in which cycloartenyl ferulate increased by 433.3%,24-methylenecycloartanyl ferulate increased by 491.7%,and ?-sitosteryl ferulate increased by 37.8%.The content of ?-oryzanol in the sprout of GBR is 6.31 mg/kg higher than that of BR and 10.16 mg/kg more than that of white rice;the germ contributes 19.9%to the whole GBR.At the same time,at this germination time,the ferulic acid content in the GBR reached the highest level of 5.66 mg/kg,an increase of 18.2%compared to BR and an increase of 495.8%compared to WR.The content of ferulic acid in the sprout of BR 57.41mg/kg,contributed 99.4%to the whole germinated brown rice.Within 30 h of germinating BR,the content of ?-aminobutyric acid(GABA)in GBR continued to increase,reaching 410.61 mg/kg at 30 h,146.65 mg/kg higher than BR.The content of GABA in the sprout was 1240.63 mg/kg higher than that of whole GBR.Through germination treatment,it was not only proved that the content of bioactive substances such as tocols(8 homologues),y-oryzanol(4 compounds),GABA and ferulic acid in GBR was increased but also was further proved that the enriched part is sprout,and the abundance of these bioactive ingredients can be optimized through various germination conditions as needed,so as to make better use of the bioactive ingredients to exert their best biological effects.They are widely used in medical,pharmaceutical,food,feed,and cosmetic industries.
