Edible fungus is popular with people now.It can provide human body easy to lack of vitamins,minerals and organic acids and other nutrients,but it is perishable,not easy to store.At present people mostly to prolong its goods shelf life with preservatives,but these preservatives more or less have some safe hidden trouble,is an urgent need to seek new green safety of preservatives.Food preservatives natural gas has become a major trend of anticorrosion technology,development of natural preservatives as food preservative antistaling agent has important practical significance.The antimicrobial substances,in this paper,extraction of edible fungus itself natural compound preservative development,its bacteriostatic effect,mechanism,and to study the physical and chemical stability,and its application in edible fungus preservation,effectively prolong the shelf life.Research results are as follows:Using the main microbial gram-negative bacteria escherichia coli and gram positive bacteria staphylococcus aureus as the indicator bacteria,which they can lead to food corruption.By using cups and saucers,chitosan,Nisin,water extract of Gloeostereum incarnatum and edible fungus extract four natural preservative bacteriostasis effect.By using the method of orthogonal combination optimization.Determine the best ratio of compound natural preservative.Black fungus water extract20%,Nisin 1%,chitosan 0%.Range analysis shows that Gloeostereum incarnatum water extract has the largest impact on the distribution of preservative bacteriostasis,the followed by Nisin,again for black fungus water extract.By the methods of cups and saucers,growth curve method and AGAR block again culture method.The bacteriostatic effect of compound preservatives and effects on bacteria was studied.Results showed that the compound preservatives for escherichia coli,staphylococcus aureus,bacillus subtilis,etc all have good antibacterial effect.Displayed in escherichia coli as the indicator bacteria,compound preservative MIC was 20%,the growth curve experimental results show that the compound preservative significantly inhibit the growth of indicator bacteria breeding,has strongbacteriostatic action,there are certain lysis effect.Further investigates the growth process of the number of living bacterium,the first 6 h dramatic decline in the number of living bacterium found reduced from 106 to 102 cfu/mL,after 12 h contains 20% of the distribution of fluid medium almost no bacteria growth,this suggests that the distribution of liquid has strong sterilization effect.Using AGAR block culture method to further examine the effect of antiseptic methods,found that after a certain time after the training,AGAR block is still not long bacteria living bacterium residues,this part of the bacteria should be suppressed.Complex natural preservative of Gloeostereum incarnatum effect on bacteria way of bacteriostasis and sterilization.Using the staphylococcus aureus and escherichia coli as experimental fungus.In this paper,we studied the physical and chemical factors such as temperature,pH,metalions of the compound preservative bacteriostasis activity.Results showed that the compound preservative bacteriostasis of the active ingredient has excellent heat resistance.121℃ treatment still has good antibacterial activity after 20 min.Relative antibacterial rate is as high as 75%.25 ℃ to 100 ℃ bacteriostatic activity basically remain unchanged.From acidic to neutral compound preservative has good antibacterial activity.Show that the compound preservative has good capability of pH tolerance,intolerance to strong alkali environment.Metal ions,Mg2+ the better activity of compound preservative bacteriostasis effect.Zn2+,Fe3+,Cu2+ ions are activated to restrain activity of compound preservative bacteriostasis.Research on the fresh-keeping effect of Lentinus edodes and Hypsizygus marmoreus.The results show that the blank group mushrooms and Hypsizygus marmoreus have been rotten when 15 d,loss of business value.While Gloeostereum incarnatum compound preservative treatment of mushroom and the weightlessness rate when the crab roe mushroom in 15 d at 16.69% and 16.81% lower than the blank group.Relative electric conductivity of 15.59% and 15.1% lower than the blank group,soluble solids content is higher than blank group 1 and 0.3.Browning degree of 0.146 and 0.165,lower than the blank group and chemical preservative treatment of mushroom and crab roe mushroom in 18 d lose goods value.And Gloeostereum incarnatum compound preservative treatment of mushroom and crab roe mushroom in 21 d to lose the goodsvalue.Comprehensive sensory evaluation and the index can be seen,the Gloeostereum incarnatum compound preservatives have prolong the shelf life of edible fungi.The effect is better than chemical preservatives.Gloeostereum incarnatum compound preservatives and elm nonpoisonous and harmless,after eating no side effect to the body.Results showed that the edible fungus compound preservative has better anti-corrosion effect,and green non-toxic,is expected to officially into the market.It can be better for the rare and precious edible fungus preservation,prolong the shelf life,meet the demand of people’s lives.This conclusion helps Gloeostereum incarnatum which is precious medicinal fungi resources can be scientific and rational developed,it provide an important basis for the reasonable application of food preservatives.
