Microwave vacuum drying technology with low drying temperature,short drying time,good drying quality,high drying yield and low processing cost is a new drying technology for drying food.The energy consumption in the microwave vacuum drying process reflects the energy utilization ratio of the equipment during its use,and it is important to reduce the energy consumption and unit energy consumption of the microwave vacuum drying equipment.In this thesis,the transformation of microwave energy to thermal energy during microwave drying process is studied.The influence factors of microwave energy conversion to thermal energy are analyzed.The temperature field distribution of potato chips during drying was simulated by ANSYS and HFSS,and the influence of microwave intensity and slice thickness on drying speed was analyzed.Using the JDH-4GZ microwave vacuum drying equipment,the potato chips were used to conduct microwave vacuum drying test,drawing drying curve,and using EXCEL and MATLAB software to calculate the effect of each variable on the total energy consumption and unit energy consumption.By using the method of orthogonal rotation design,the influence equations of material section thickness,total mass and microwave intensity on total drying energy consumption and unit energy consumption are obtained.The accuracy of regression equation is determined by significant test,and the optimum process combination is obtained by MATLAB programming.The influence trends of various factors on total energy consumption and unit energy consumption were analyzed.The research of this thesis can provide reference for the design and application of microwave vacuum drying equipment to save energy.
