Kumis is one of the traditional Mongolian drinks.According to the Mongolian history,the milk is called a "sacred drink".Historically,sour horse milk plays an important role in the production and life of nomadic society,and it has now been preserved with the development and evolution of society.Xilin Gol has been a royal sacred place since ancient times.Located in the plateau and experiences a semi-arid climate with i.e dry summer/winter,it is the best area for the making of kumis,and the horse milk is best with Ujumqin white horse milk.Situated 5 km southwest of the town of Balgar in the West Ujmqin Banner,Xilin Gol League,in the south of the Nadam’s venue,lies a herder cooperative organization called "Qindagan" White Horse Development Cooperative.In this cooperative,the herdsmen squeeze horse milk to make kumis as one of its production and lifestyle.In this paper,along with the herdsmen’s lifestyle,the herdsmen’s extraction and fermentation process of horse milk,the collision and fusion of traditional production methods and modern techniques,etc.are deeply studied.It draws the Mongolian love for horse culture and the significance of the inheritance of Mongolian culture.The kumis has a long history.With the development of society,the traditional production process of kumis is combined with today’s advanced technology.This thesis consists of an introduction,a topic,a conclusion,a bibliography,an appendix,etc.The introduction part introduces the reasons for the topic selection,previous studies,research significance,research methods and research sites.The first chapter briefly describes the history of the kumis and its role in historical exploration.The second chapter mainly introduces the research site,the process of fermenting kumis,the traditional production method and the comparison of modern craftsmanship methods.The third chapter discusses the social application of kumis,the influence and effect of traditional production technology on the current society in the current state of social development.The conclusion part,comprehending the full text,demonstrates the origin and status of kumis,the impact of modern industry on traditional crafts,how the rapid development of society has influenced the Mongolian people’s production,life styles and values,and retained the important mission with the significance of the excellent Mongolian culture for the inheritence of modern young generation.Finally attached a picture of the survey location.
